Today after work I went grocery shopping with making soup in mind. I wanted something hearty but not heavy.
Chicken & Vegetable Soup- Saute finely chopped garlic, diced onion, sliced celery, fennel and carrots in some olive oil.
- When vegetables have softened, add water and bring to the boil. Add some vegetable stock if desired (ie Vegeta).
- Put in a few maryland pieces, making sure they sit below the liquid level.
- Simmer until chicken pieces are cooked, meanwhile skimming oil from the surface.
I also added pasta shells.
