I saw a recipe for a warm potato salad on a British cooking show on the flight back from Melbourne but couldn't remember exactly how they made it. I thought I'd make it up as I went and it turned out great!


Warm Potato Salad

  1. Boil potatoes.
  2. Fry chopped bacon in a small amount of olive oil in pan.
  3. Remove bacon from pan (leaving remaining oil in pan) and place over some baby spinach leaves in a bowl.
  4. Return the pan to the stove and add some white wine vinegar and seeded mustard - stir for a few minutes.
  5. Slice potatoes and add to the dressing in pan - fry for a few minutes.
  6. Tip out everything from the pan over the bacon and spinach.
  7. Chop some fresh chives and sprinkle over the dish.
