- Boil potatoes.
- Fry chopped bacon in a small amount of olive oil in pan.
- Remove bacon from pan (leaving remaining oil in pan) and place over some baby spinach leaves in a bowl.
- Return the pan to the stove and add some white wine vinegar and seeded mustard - stir for a few minutes.
- Slice potatoes and add to the dressing in pan - fry for a few minutes.
- Tip out everything from the pan over the bacon and spinach.
- Chop some fresh chives and sprinkle over the dish.

I saw a recipe for a warm potato salad on a British cooking show on the flight back from Melbourne but couldn't remember exactly how they made it. I thought I'd make it up as I went and it turned out great!
