Tonight I busied myself cooking a large batch of bolognaise sauce. I froze a third, used a third for spaghetti bolognaise for work dinners and saved a third to make lasagna.

I roasted the vegetables last night.


Tonight I made another batch of my Thai green curry paste and made a large pot of curry for out work lunch tomorrow. I made extra paste to freeze.

You can't beat homemade curry paste.

I spent the night in the kitchen cooking up a storm! I googled a recipe for a basic cheese sauce and made a cauliflower cheese bake.

I precooked the cauliflower in the microwave for a few minutes to soften it.

The cheese sauce worked out well.


I used the rest of the cheese sauce to whip up a fast pasta dish with pancetta.

Today at work, we had an impromptu picnic! One of the guys brought me some homemade harissa paste with green chillies and it just so happened that I had brought in a loaf of fresh bread for everyone to help themselves. Everyone was in love with the harissa paste - it was divine! It was the right amount of heat for me.


I had a slice of duck terrine and some goats cheese in the fridge that I had planned to take to a picnic later tonight but I ended up bringing them out for everyone to share. It was just such a gorgeous combination.

Remember a few nights ago I made a steak dinner with some 'market value' scotch from Woolworths? Remember how the steak was rather tough and chewy? Remember that I had bought it in a six piece bulk pack?

Well, I can't let it go to waste.

I marinated one in olive oil, sea salt, cracked black pepper and fresh rosemary and put it into the fridge. The other four pieces I put into the freezer. I can use them for stirfries or noodle soups.

Tonight, I thought I'd brave the second piece of scotch steak.

I cooked some prawns in my little Le Chasseur pot.

Creamy garlic, chilli and saffron Prawns.

I used some of the sauce for my steak dinner.

Lunch at Work
Spicy Chicken & Mixed Beans Wrap


I made these with a packet of Mexican spices straight from a packet, diced chicken thigh and a can of mixed beans. I heated the mixture up on a wrap in the microwave and then wrapped it up with some fresh cut lettuce and grated cheese. Yum!

Dinner
Scotch Steak with Buttered Baked Potatoes and Corn
with a Creamy Mushroom Sauce


Deliciously crisp on the outside, soft on the inside.


Pan juices, butter, mushrooms, a splash of water, a dollop of cooking cream.

I bought some sliced Roasted Pancetta from the gourmet food store in Centro Maddington after work.

I raced home with my groceries and just before passing out from a hypoglycaemic attack, I managed to rip open a fresh bread roll from Bakers Delight, lay two slices of the roasted pancetta between the two halves, and gobble it down.

A few nights ago I marinated some chicken drumsticks - olive oil, ground paprika, ground cayenne pepper, ground coriander and sea salt. I put them onto a baking dish and placed them into the oven.

While dinner was cooking, I did some prep work. Chicken drumsticks were on special at Woolworths so I bought a few kilos. I like to buy my chicken when it's on special and freezing it in different forms for later use. Tonight I plucked the remaining bits of feathers from the drumsticks and divided them into zip lock bags. I didn't need to trip excess fat off because the boners (hee hee) did a great job of it themselves.

I prepared a few different marinades.

Roasted Spicy Paprika Chicken

I steamed the asparagus in the steam from the boiling potatoes. A trick I've learned it to run them under cold water after they've steamed to keep that gorgeous, fresh green colour. I then wrapped them in slices of prosciutto, sprayed them with a bit of olive oil and then popped them into the oven for several minutes.

Before work today, I set to work in the kitchen to make meals for the next few days.

On the menu: Lasagna & Eggplant Moussaka

I defrosted homemade tomato sauce and lamb mince overnight. All to do today is to make the bechamel sauce and assemble the dishes.

I googled a quick recipe for the bechamel sauce and set to work making it. I think in hindsight I must have read the measurement for the plain flour wrong. I think instead of using tablespoons I should have used teaspoons. After adding the warm milk, the mixture was really thick. It resembled choux pastry. I thought 'Do I start from scratch or do I add more milk to try to thin it out?' I decided to try adding more milk. I added almost a litre and managed to get it to a spreadable consistency. I didn't want to waste my other ingredients so I did a test run.

In a small ramikin I put a spoonful of the lamb mince with the tomato sauce, and a spoonful of the bechamel sauce. I baked it for about fifteen minutes.

Verdict: Yum!!

The consistency of the bechamel was thick and creamy and it was like eating a little pot of lasagna without the pasta. Time to continue with the dishes!


Eggplant Moussaka
Layers of eggplant, zucchini, the lamb and tomato mixture and bechamel sauce on the top to finish it off. I grilled the eggplant and zucchini on the sandwich press first.


Lasagna
I layered instant lasagna sheets, the lamb mince and tomato mixture, and the bechamel sauce. Finish off with a layer of bechamel.


I got stuck into the moussaka before work!

Lunch at Work
Garlic & Parsley Chicken Mignon
Roasted Potatoes


I prepared this chicken mignons last night. In a zip lock bag, I combined some butter, crushed garlic and chopped fresh parsley. I snipped off one of the corners of the bag to create a piping bag!

Squeeze a bit of the garlic & parsley butter onto each mignon and roast them in the oven for about thirty minutes at 180C.

I also baked some potatoes with the mignons. The resulting pan juices were oh so so delicious! Buttery pan juices infused with garlic, parsley, and the taste of chicken and bacon. *drool*

After having some terrible news announced at work today, I was in desperate need of some comfort food when I got home. I had some camembert with a glass of wine while preparing dinner. Cooking is such a wonderful distraction.


While waiting for my food to cook, I couldn't help snacking on some of the stirfry Mum made. She was so delighted with it - apparently one of her friends has grown this very hard to find melon or gourd and gave her one. You can't find it at the shops. I saw it briefly before it was all chopped up. It looked like a bitter gourd but it tastes like choko. Mum fried it with prawns and it's such a great combination as you still get the flavour of the melon. Delicious!


Simba was hungry for his dinner. I can't believe how fast we go through his cans of dog food! I bought a large can of CHUM yesterday and I gave him some of this tonight. As I was mashing it up with some rice, I couldn't help but fall in love with the smell! Yes, I quite like the smell of some of the dog food we feed Simba. This CHUM smelled so good...it didn't take me long to realise it smelt like SPAM!

Yes I know, I know. I've been really slow with the posts all week. But with good reason. I've been on the night shifts at work and have no access to internet because Long needed his prepaid mobile broadband back. So...I will be looking into buying my own DONGLE!

Chicken Laksa


I made a large pot of Italian tomato sauce today. I'm going to freeze it to use in the upcoming weeks. It will save me some time!

a can of diced tomatoes, a bottle of tomato puree - all set to go!


I had some leftover Mustard Chicken for dinner at work tonight.

As a side, I packed some instant cous cous with the intention of rehydrating it at work with some hot water. I added the boiling water and allowed it to sit with the lid on for a few minutes. I ended up with rather gluggly cous cous though, because I had added too much water! I stirred in my butter, pinenuts and parsley and it tasted ok. It just wasn't fluffy.
