GIRLS NIGHT!

I had a few girls over for dinner and drinks tonight. Initially we were just going to have snacks but I was able to finish work early and headed to the shops to grab some groceries to make dinner.

I made the dressing with the pan juices from the chicken and some mayonnaise.


Poh Chin brought us some Macarons from Jean Pierre Sancho for dessert.


Sarah and Fleurette made us Apple Martinis!

We went through three bags of microwave popcorn. And by 'we', I mean 'me'.

Today at work I took my remaining bread rolls from last night's dinner and we had them for lunch. We didn't have time to organise our weekly work lunch as we were having a laboratory accreditation done yesterday.

I melted cheese on the roll in our toaster oven
and then piled on ham, fresh tomato, cucumber and lettuce.


When I got home tonight, I couldn't wait to pour myself a drink and try out the 'Whiskey Stones' that Cameron bought me for my housewarming present. They are an awesome idea!! Instead of adding ice blocks to your drink, you add these stones that you keep in the freezer. That way, your drink stays cold and doesn't become diluted as the ice melts.

After work I caught up with a friend at the Greenhouse. We went upstairs to have some drinks and unwind. It was such lovely weather and it was great to be out in the fresh air!

It was a pity we didn't have a view of the sun as it set, but as it got dark we got hungry and ordered some nibblies.

Potato Croquettes and Albany Rock Oysters 'el naturale'

The potato croquettes were delicious! However, the oysters were so incredibly salty. I was very disappointed and very worried that my lips would puff up from the saltiness. Very fortunate that they did not. I think the guy at the bar was rather insulted when I told him how salty the oysters were.

Deciding to move on, we took the train to Claisebrook and went to a supper club that I have always wanted to try.

The interior was lit with a red light and it felt like we had wandered into a fancy dress 60s goth party. Being a 25+ venue, the crowd were mature and restrained. No drunken youngens being boisterous and loud. They had retro music playing and a fantastic, lively atmosphere. I would love to come back again!

We shared some Empiladas and Potato Wedges.


Gotta love spontaneity!

Marissa's Chicken Nuggets with Salad

I took home some of these chicken nuggets that Marissa made for our feast yesterday. I rummaged around in the fridge for whatever nibbles I could find to throw together this plate of leftovers for lunch.

In the evening I busied myself making cupcakes to take to work tomorrow for everyone. I used the prepackaged White Wings chocolate cake mixture but instead of using milk, I used buttermilk.

I also added chocolate chips into the mixture.

To decorate, I made a butter cream frosting.


By adding drops of green food colouring, I transformed some of the frosting to green and piped little 'christmas trees' on some of the cupcakes.

I crushed a candy cane to sprinkle onto some of the cupcakes.


I tried to pipe a 'wreath'. I think I need to work on my piping skills!


I didn't have time to find a cutter to make holly leaves, so I had another idea. Here's how to make holly leaves from green musk sticks:

Slice the musk stick.


As you can see, one side gets flattened against the chopping board when you slice it. Using a blunt utensil, make an indentation into the flattened side and this should reshape the musk stick slice to look like a holly leaf!

Voila! I used red mini M&Ms for the holly berries.

At a recent party I went to, they had this gorgeous new drink that I instantly fell in love with.

This morning at work someone had brought us some cupcakes from a breakfast meeting and I was eyeing off this one.

It was ok - a buttery cupcake. I couldn't eat all the icing though!

Dinner tonight was a collaboration between Mum and I. Using the rich tomato sauce I made the other night, I added lamb mince, chopped onion and garlic to create a rich sauce. Mum used this sauce to make a lasagne, with her own home made bechemal sauce.

The end result...One hell of a good lasagne.

I had some of the lasagne and salad for dinner.


Noel bought this apple cider when we were in Nannup. Yum.


What's for dessert? Some Starburst Jelly Babies.

I had an awesome day today! At work I was shown how to take blood from a patient.

That's right, I bled a person.

It's been one of those things I've been wanting to do for the past several years but haven't been afforded the opportunity to do at where I used to work. I could have paid to go to a short course but what's the point? Phlebotomy is a skill that you need to learn through actually performing the act of drawing blood from someone. It's one of those skills that you can only learn on the job.

I have dreamt of the moment of jabbing someone with the syringe for so many years. I imagine the syringe piercing the patient's flesh...and then a spray of blood flying across the room and me flustering around, not knowing what to do. A bit melodramatic but that's the daydream I have.

So, when I actually did it for real today, I was high on adrenalin. I was only worried if something should go wrong or if I hurt the person who was my guinea pig. But my hands were steady. I was confident. If I wasn't holding onto the syringe and slowly drawing out the person's blood, I would have squealed and jumped for joy!

We spent the better part of the afternoon gathered around a table enjoying some afternoon tea. A few of us brought in some snacks. It seems it's the thing to do on Fridays in the lab. I brought in some of the satays I made last night. Someone else brought in some party pies, vanilla slice and pastry. I started off cutting myself a small piece of the vanilla slice, and then ate more. So good!

The sashimi wasn't good. The squid and mackerel were so rubbery. I could barely manage to swallow them.

The tempura was much better.

We went for coffee at the Coffee Club in the city afterwards.


Back at Ling and Shallen's place, we put together some nibblies. I brought over a bottle of chilled champagne. No, not sparkling. Actual real champagne from France.

NANNUP BRIDGE CAFE

We trawled up and down the street for about an hour, waiting for the cafe to open so we could have breakfast. With nothing open and no one else around, we felt like we were on the street in some country and western movie. Minus the chaps, horses and tumbleweeds.

(Oh, and by the way...no, I wasn't drinking wine early in the morning! We just had time to kill so we busied ourselves taking photos.)

Tiger Prawn Salad

I bought the prawns from a seafood store next to a petrol station on the drive back from Nannup. They were already cooked so I just peeled them when I got home. It's not really salad weather yet, but I could not resist these gorgeous prawns when I saw them.

I made the dressing with some mayonnaise, tomato sauce, lime juice, cracked pepper and fresh chopped parsley. I used the whole lime because I love the tanginess. Tanginess...don't think that's a word...

I enjoyed my salad with the apricot liqueur I bought in Balingup combined with soda water.
