I bought a bag of zucchinis for only $2, with the intention of finally getting around to making zucchini slice. I googled a recipe and found one at Taste.com that I loosely based mine on.
Onion, bacon, grated cheese, plain flour, eggs and zucchini.
I should have used a smaller, deeper pan.
Yum! Delicious to eat warm or cold!

I caught up with Mum, Christina and Jocelyn this morning for breakfast in South Perth. We had to wait a while until a table freed up but the food didn't take long to arrive after we ordered.

I bought some paneer yesterday and got busy in the afternoon trying a curry dish for tonight's dinner at Sarah's place. I thought I'd make a cauliflower and paneer curry. I googled a recipe that didn't involve grinding three different spice mixtures and three hundred steps. Plus, I didn't want to have to go out and buy any new spices.



In a pot, I heated some oil and then fried the onion, garlic and chillies. I added the spices and after a few minutes, added some tomato paste and chicken stock and cooked it for a few minutes - what gorgeous flavours! I then added a can of crushed tomatoes, the paneer, cauliflower, some fresh curry leaves and some water. Once the curry came to a boil, I covered the pot with a lid and simmered it on low heat for about half an hour.


Sarah marinated the horse in yoghurt overnight to tenderise it. If no one told me it was horse, I would have thought it was some cut of beef.Leftovers for lunch at work tomorrow? Yes please!

I visited an Indian store in Cannington today to get some paneer for a curry that I need to make tomorrow night.
On the way out, the girl asked me "Is there anything else you need?"
I replied, "No, I think that's it."
She must have seen me glancing at the pie warmer because she then asked, "Would you like to try one of those samosas?"
I thought for a few seconds and said, "Sure, why not! Actually, I'll take two of them!"

I ate one as soon as I got home...they were divine! They were filled with potato and peas. They were so deliciously spicy!

We were watching Mary Poppins tonight and booked in for dinner here first. The restaurant has replaced Victoria Station and I'm hoping I enjoy the food because the last time I was at Victoria Station, it was terrible!

Entree: Beef Carpaccio
This was absolutely gorgeous! I have been craving carpaccio for a while now...in fact, I have been craving raw beef dishes since I had that awesome steak tartare in Singapore. This dish did not disappoint!

Main: Barramundi
The fish was cooked well. The little pancake thing on top was a bit weird, I would have preferred some more vegetables but the broccoli underneath the fish sufficed. The puree was great too...though I don't remember what it was! Broccoli!?
I think the beef carpaccio won hands down though!

Scotch Fillet with Baked Potatoes
and a Vegetable Stack
I used to make these vegetable stacks quite often. First, you pan fry slices of eggplant and zucchini in a little bit of oil in a pan and then layer them with some sliced mushroom (this time I used whole portabello mushrooms), sundried tomato and crumbled fetta. Drizzle a bit of olive oil over them and bake in the oven for about ten to fifteen minutes. Delicious!

I spent the night in the kitchen cooking up a storm! I googled a recipe for a basic cheese sauce and made a cauliflower cheese bake.

I precooked the cauliflower in the microwave for a few minutes to soften it.

Fresh from the oven!

The cheese sauce worked out well.

I used the rest of the cheese sauce to whip up a fast pasta dish with pancetta.

Steamed Corn, gourmet Italian Baked Beans,
slivers of Brown Onion & Sardines in Hot Sauce
Oh yeah, I had onion and fish breath big time when I returned to work after my break! But a few mints took care of that. I love sardines! I would prefer a can of sardines in a salad over a can of tuna. Sardines are just much tastier and since I was young, I have always loved nibbling on the edible spine bones!
I bought some fresh artichokes when I was at the Malaga markets on the weekend. I've made soup using Jerusalem artichokes but not the Globe artichoke.I googled how to prepare the artichokes the other day and didn't have enough time since it is quite involved. So today I made sure to set aside a few hours!
I found this online tutorial on How to Trim an Artichoke very helpful. There are gorgeous photos and step by step instructinos. My artichoke looked a bit different to the ones pictured though but I managed ok.
I had four artichokes so I trimmed two of them and put them in the steamer while I prepared the remaining two to make soup.

Here is my artichoke heart after the fuzzy choke has been removed. Despite using wedges of fresh lemon to try to stop the discolouring, it just oxidised pretty much immediately after I made any cuts into it.
Creamy Artichoke Soup
For the soup I cooked some garlic, onion, leek and potatoes in a bit of butter. I added some Vegeta stock, a few pinches of thyme and two bay leaves. It didn't look like much after it had all cooked down, but after I blended it with my mixmaster, it looked much more appetizing.
Meanwhile, I enjoyed eating the fleshy parts off the petals with a glass of wine. As has been suggested online, I dipped the base of each petal into some butter and scraped the fleshy parts off with my teeth. Yum! When I got to the hearts, I sliced them up and added them to the soup.
So, my verdict with artichokes?
It's a lot of work so I wouldn't recommend them unless you've got some time on your hands to waste. But they do taste so good when you've spent the time to prepare them yourself!

Leggo's Spinach & Ricotta Agnolotti
in a rich Tomato Sauce with Basil
I couldn't go past buying a bag of this agnolotti when I saw it was reduced to only $2! I made a simple sauce using a can of crushed tomatoes, crushed garlic, diced onion, chopped fresh basil from the garden and cracked black pepper. Serve with some fresh grated pecorino, pour another glass of red and all set!

I roasted the chicken and carrots first, then threw in the corn. Just before it was all ready, I threw in the asparagus. Delicious!After dinner I drove over to Marissa's for coffee. As usual, she laid out a spread of cake and Mrs Pelle's scones. I couldn't resist!

With the day off work, I had a relaxed, lazy breakfast when I finally decided to get out of bed.

Breakfast
Bacon & Poached Egg on Wholemeal Toast with Baked Beans
The baked beans were Jocelyn's leftovers in the fridge. I'm trying to clean out the fridge and avoid as much food wastage as possible but there's only so much I can eat and there's only so much of the food that Jocelyn eats that I'm willing to eat. I was actually looking forward to the baked beans, but they were so bland! The tomato sauce, instead of having a sweet, tomatoey taste, was tasteless! I think Jocelyn must eat the low salt version of baked beans. They were awful! I tried adding some salt and tobasco sauce but it ended up going in the bin.
After some grocery shopping and errand running, it was time for afternoon tea. On a mini pana di casa vienna roll from Bakers Delight, I layered thinly sliced strips of prosciutto, sliced roma tomato and sliced bocconcini. I drizzled a bit of olive oil over, cracked some black pepper and popped it into the oven for about ten minutes until the cheese has melted.


Garnish with fresh basil leaves from the garden...

and then it heads to my mouth.

Dinner
Cajun roasted Chicken Thigh with a warm Vegetable Salad and Cous Cous
I roasted some pumpkin and a bulb of garlic, halved, in the oven with some olive oil, balsamic vinegar, sea salt and cracked black pepper. I steamed the beans and then tossed them through the other vegetables. I toasted some pinenuts and added these too. Great to eat as it is but I also made some cous cous and mixed that through the vegetables.
The cloves of garlic were cooked perfectly! I am going to smell like garlic at work tomorrow after having some of this for lunch!
