That's right, we have discovered that we can successfully cook roti (the frozen type that you get from Asian supermarkets) in our little oven at work. Simply put it under the grill and once the top is golden brown, flip it over for another few minutes. Woo!

Homemade Char Siew Roll
I love those Vietnamese rolls you can get from the Asian grocers in Northbridge. I haven't had one for years, but I made my own version if I can get my hands on some char siew. I saw some pork fillet on special at the shops the other day so I decided to try making my own. I bought a packet of the marinade from the Asian supermarket. It comes in powder form and you add water to it and marinate the pork overnight. I then roasted it and then sliced it up. Not bad! It tastes exactly like char siew, just without the bright red colour. Mum has the colouring for it at home...she used to make her own char siew.

Oh my...the curry paste I made for this last night turned out to be the best I've made. Ever. I hope I can recreate it since I don't cook using measurements. I cook to feel and taste, so my concoctions always turn out slightly differently.
Don't worry, I haven't forgotten my truffles...

Sometimes I feel like something really simple for dinner. Especially in the winter months when it's freezing cold and pouring buckets outside. It's nice to snuggle on the couch and eat something that's warm and filling.
Something that I grew up eating and still love to eat is rice porridge. It's the ultimate comfort food and being Asian, I grew up with it. Mum always made rice porridge for me when I was sick or just feeling a little under the weather. Even when I still lived at home the last the several years, whenever I was hungover on a Saturday or Sunday morning, I would stumble into the kitchen, ask Mum to make some rice porridge and then go back to bed and sleep in until it was ready.

I have really been getting stuck into these large imported scallops that I buy frozen from the local Asian grocer. Even though they are frozen, I can throw them into the rice porridge while they're still frozen, or into soups, and they are so soft and tender to eat when they're cooked. Not tough or dry at all. Juicy!

Today I gave Jocelyn and David a hand moving house so we stopped by David's parents' house for lunch. Yum! Homecooked Vietnamese cuisine!

The pork belly dish was absolutely divine! All that deliciously tender pork belly that melted in your mouth! Jocelyn had better learn how to make that dish!!

Later at night, we were all exhausted so thankfully Mum made dinner and brought it over for us. To celebrate the Chinese New Year, we also enjoyed the lo hei with some smoked salmon. Yum!

We hit the beach today again and the weather was gorgeous! We snorkelled and enjoyed the sunshine!

Despite being exhausted after a long day, I really craved some homecooked food tonight.

When using the microwave, I always cover the plate to avoid food splatters and having to clean the microwave each time. I have plastic splash covers but I don't like to use them when I'm reheating things that contain tomato because when it gets hot, it can leave stains on the plastic. Also, to avoid more washing up, I sometimes use cling wrap.
At first I was rather worried when I saw the cling wrap expand like a bubble when reheating food. It never used to do this in my mum's microwave but I suppose it's because hers is old and a lower wattage. My new one is awesome - it has sensor reheat and warms food up in no time at all.
I had a friend over tonight for dinner and I was inspired to cook Thai food.
