Last night I cooked for perhaps one of the last times in Mum's kitchen before I move out officially tomorrow. What did I make?

Chicken & Vegetable Soup with Pasta Shells

Of course.

With lots and lots of grated pecorino and fresh coriander.

Aahh, I could eat this forever.

Today was my day off work and boy, did I manage to tick off alot of things on my to do list!

  1. Clean and do a water change for the aquarium ✔
  2. Give Simba a bath ✔
  3. Vacuum ✔
  4. Mop ✔
  5. A load of laundry ✔
All this while cooking dinner!

I spent a few hours making the stock for my soup with a pork hock, lemongrass, onion, beef stock, star anise, dried shrimp, soy sauce and fish sauce. Oh, and a generous dollop of sambal belachan. Delicious!

Since I'm not a nine-to-fiver, I now have to ask Mum to pick up miscellaneous groceries for me during the week. I felt like laksa, so I asked her to buy some laksa sauce for me. She made a fantastic choice with this one.

Vietnamese rice noodles, coconut cream, Singapore curry laksa paste.


I sliced up some fish cake, Vannamei prawns and found some tofu stuffed with prawn and pork mince in the freezer.

It was delicious.

It was my first day on the new job today! The time flew so fast!! As with all new job transitions, I had alot of information to go over (and hopefully absorb!) but it was a really good, relaxed first day.

The office is rather spacious and I have a large corner desk - with a window!! Albeit it's just the view of the buildings next door, but still, it's a window! I'll be able to see what the weather's like and gaze at birds in the trees, watch the rain lashing against the roofs and get some real sunshine through the glass.

It's going to take a while to get used to having my own desk. And drawers. And a partition wall to stick notes and pictures on. I've already pinned up a photo of Simba that I used to have stuck to the wall at the lab. I suppose over time I will be personalising my little office space so that it feels more like home.

One thing's for sure - I am absolutely loving how I can bring a cup of coffee to my desk to sip while doing my work. No fear of someone walking in and glancing disapprovingly at me eating at my workspace. I have already begun filling my bottom drawer (yes, I have drawers!!) with food and snacks.

After my first busy day, I really felt like a big hot bowl of soup for dinner.

I made prawn wantans using the leftover prawn meat from the weekend when I made prawn wantans for our steamboat night on Saturday.


I peeled and deveined the prawns, chopped them up and seasoned them with ground white pepper.

I also added some chinese greens to the soup and served with lots of fresh chopped chillies and deep fried shallots.

Oh, it was so sooo good!

Winter means more soup! Thick, hearty, delicious soups with lots of pasta!

Risoni with Carrots & Celery Soup


I love to pour alot of grated pecorino on. It melts into the soup and gets so stringy. Love it!

I put basil in the soup, but I also love to serve with some fresh coriander. It adds a fresh, crunchy texture to the dish.

What I love about this soup is that it always turns out different each time I make it. I don't follow a recipe so the quantities of different are always different. One day the celery might be cooked until they're extra soft. Another day they might retain some of their crispness. I might add zucchini or speck. I might not use chilli flakes but add fresh cut chillies afterwards. I might add more different vegetables and not add pasta. It's always a different dish and that's why I love it.

Tonight I made it so that it was mostly risoni, with some carrots and celery through it.

I could sit and eat this all day.

With lots of cheese and a large glass of red wine.

I totally forgot that I had a frozen stash of meatballs in the freezer! They're my Pork and Leek Meatballs. I thawed them out overnight and today made lunch with them.

I made a rich tomato sauce with garlic, onion, celery, canned crushed tomatoes, white wine, ground sweet paprika, ground coriander and chilli. I cooked the meatballs in the sauce while it was simmering. I threw the spaghetti in when the meatballs were cooked.

I sprinkled some grated pecorino and garnished with a fresh basil leaf. Pretty!


Oh my god! I could not believe how soft the meatballs were! I thought that after being frozen they wouldn't retain the same qualities that they have when they're fresh. The meatballs were melt in your mouth and packed with lots of flavour.

I couldn't help giggling to myself in glee while eating this. I am soooo happy with myself!

I took some diced chicken thighs out of the freezer before work and asked Mum to make one of my favourites if she had time in the evening since I'm on call tonight. I got home and found it waiting for me - yay!

Mum usually just cooks this dish with the chicken, onion and carrots. I had some leftover vegetables in the fridge and asked her to chuck those in too. Baby corn spears and red capsicum made a great addition!

I love eating this with lots of Mum's fried chilli and a couple of fried eggs. I use egg rings and cook them sunny side up!

I love to break the gooey yolks over the rice!

In the warm weather we've been having, the sage in the garden has been flourishing. I need to start incorporating this delicious herb into my cooking!

The last time I made potato bake, I used lactose free cream. It wasn't as good as when I use regular cooking cream. I've been craving the gooey, rich cheesiness. I didn't have any provolone cheese, but it was still just as good. I used lots of tasty cheese and smothered the top with a layer of cream.

KOREAN BBQ at Ling & Shallen's

Shallen's been keen on having a Korean style BBQ for as long as I can remember now, but it's neither been the weather for it and it wouldn't have been very comfortable sitting around on the floor of their patio cooking it. So, today's lunch was a surprise introduction of their new outdoor furniture setting and it was beautiful - absolutely perfect - weather for it.

I prepared my marinated meat yesterday before work.

Beef Bulgogi

Ingredients:

  • 1/3 cup soy sauce
  • 1 Tbsp sesame oil
  • 1 tsp chilli flakes
  • 4 cloves garlic, crushed
  • 1 small onion, sliced lengthwise along core
  • 500g beef (I used chuck)

    Method:
    1. Slice beef thinly.
    2. Combine with the rest of the ingredients and mix.
    3. Leave for a few hours in fridge to marinate, or overnight if possible.



    This morning I woke up and prepared the squid that I had defrosted overnight.

    Squid Bulgogi

    Ingredients:

  • 1/4 cup soy sauce
  • 1 Tspn sesame oil
  • 1 tsp ground white pepper
  • 1 tsp chilli flakes
  • 200g squid

    Method:
    1. Prepare squid by scoring the insides of the tubes, cutting them into small pieces of roughly the same size.
    2. Combine with the rest of the ingredients and marinate for a few hours, or overnight if possible.


    Now, I know the squid technically isn't 'bulgogi', but I'm calling it that for lack of a better word and I'm too lazy to google.

    I surprisingly felt full rather quickly...must be the weather and the hint of a headache I have - which *alas* meant no beer to accompany my lunch!


    Aaah! The aromas of all the differently marinated meats was mouthwateringly divine!

    Mum's stirfried Beans & Bacon with Steamed Rice


    At home, I felt like noodle soup and set about soaking the bee hoon in water. I looked in the fridge and spotted some bean sprouts, fresh Vietnamese mint and I remembered I had some laksa paste in the fridge door. My brain whirred as I drained the bee hoon, put a lid on the container and put it into the fridge for use in the near future. I went to the pantry and took out some Vietnamese rice noodles and proceeded to boil water in a pot to cook them.

    I was having LAKSA!

    Ingredients:
    Laksa paste
    peeled Australian King prawns
    chillies stuffed with fish paste & chicken mince
    frozen clam meat
    sliced fish cake
    bean sprouts
    Vietnamese mint


    I boiled some water and added the laka paste to it. After a few minutes, I added some coconut milk and then let the soup simmer for a few minutes before I added all the ingredients, except the bean sprouts and mint. In a large soup bowl, I placed the cooked rice noodles and bean sprouts. When all the ingredients in the laksa soup had cooked, I poured it all over the noodles bean sprouts in the bowl and garnished with the Vietnamese mint.

    Geraldton - Day FOUR


    Lunch - Penne with Caramelised Eggplant, Zucchini
    & Prawns in Olive Oil, Garlic & White Wine


    After work I went home to change and rushed to the beach for a swim, the weather being perfectly warm and only a slight breeze in the air. As I parked the car, I saw another car in the parking lot and several metres away, perched on top of the sand dune on a fold-out chair, was a guy strumming his guitar. I slid past him down the dune and as I was walking out towards the water, I pretended in my mind that his music was the soundtrack to my moment in time. I was amused! I was expecting it to turn into the Jaws theme when I got into the water - ha ha!

    The water was absolutely beautiful and refreshing! I really could have stayed out there for the rest of the day until the sun set, but I needed to get back and make a start on dinner. I got out, rinsed myself off at the nearby shower and then decided there was time to take a brief stroll down the beach before going back. This would also give me time to dry off.

    I can see the attraction of living here. Peaceful, laid-back. A beach pretty much at your doorstep. It's not that far from Perth. I suppose if ever I needed a break away from the stress of work, I could jump on a plane and come here to re-energise myself. There's an option worth thinking about next time.

    Heading back to the car, I got stopped by the guy playing the guitar. He approached me and I suppose what happened next could be called one of those 'movie moments' that you always wish you could have whenever you're watching a romantic comedy. Except in knowing that this was my 'moment', I couldn't help cringing a bit as I realised how corny it was at the same time! The guy basically told me that I had given him inspiration for coming up with a song while he saw me out there swimming alone. I think I remember nodding and replying "Really? That's great..."

    What followed was a brief conversation - basically he's driven over from Melbourne to settle in Perth after falling in love with it whilst on holidays not long ago. He writes music and sometimes gets it put into production for various things. He's currently working on music for some website. Anyhoo, I gave him my email address just in case he really does end up writing a song about me so he can send it to me.

    On the drive home, I just couldn't help feeling a surge of self-confidence coursing through my body - I wanted to turn up the music and dance! My ego had been given a huge boost. Maybe there's hope for me afterall. All I have to do is go swimming alone in remote coastal towns.

    I bought more of the fresh cooked Tiger Prawns and made another salad as an entree tonight. I used gourmet salad leaves, the other roma tomato I bought, and made a dressing out of olive oil, fresh lemon juice, chilli flakes and a pinch of rock salt. The lemon really helped create a light, zesty flavour.


    A few hours (and a few glasses of wine) later, I got up and cooked my other piece of steak. I had it pretty much the same way as last night. I am going to have to make this steak sauce for my meat-loving friends one day!


    On impulse, I bought this packet of cheese. I used to eat it alot when I younger, when my Mum bought it for us as a snack. I also had it at Noel and Fleurette's place one night a few weeks ago. I had a few pieces while waiting for my steak dinner to cook.

    I went to bed chuckling over my "magical movie moment" at Sunset Beach.
