I caught up with friends for lunch today after work. I like the ambience of the place but some of the artwork is a bit disturbing for my tastes. Especially the painting of a stereotypical Asian guy in the nude. While I'm eating? Conjures up images I'd rather not think about while I'm trying to eat!

Marissa and I shared the Curry Puffs
I think this was about $18 - what a rip off!
My mum makes these and could make two dozen for less than that!


We also shared the Beef Rendang, which was money better spent.
Delicious, melt-in-your-mouth chunks of beef.


I cooked a Roast Beef dinner tonight and had a few friends over. I love roasting a big chunk of meat but rarely do it since it's not really a meal for one.

After such a great meal, we had to follow it with a dessert. So, Ling set to work.

I recently spent one of my birthday gift vouchers on some things from Kitchen Warehouse (thanks Sarah!) and one of them was a Le Creuset Pie Dish - for only $20!!

I couldn't wait to use it!

So...tonight I made a Shepherds Pie.

Premium beef mince from my local IGA, garlic, onion, ground coriander, ground cumin, cracked black pepper, a can of crushed tomatoes, tomato paste, and some frozen peas.

Top it with a layer of mashed potato...

...and bake in the oven until the potato starts to get that gorgeous colour.

Today at work we decided to use up all the various types of ice cream in the freezer to clear out some space. There was Ian's mango ice cream, Ian's raspberry and vanilla ice cream, and about a quarter of a tub of shop bought Neopolitan ice cream.

We started scooping out the ice cream into cups and I peered into my locker to see what we could serve with it.

I found a banana, which I peeled and sliced.

I also found some dark chocolate, which we melted in the microwave and drizzled over the top - our own ice magic!

At the last minute I remembered a Flake chocolate bar I had in the freezer and we crumbled that up and scattered it over our sundaes.

How awesome is that!?

I had friends over for dinner tonight and I asked them to bring dessert. They brought Betty Crocker's 'Whoopie Cookies' and we baked them and enjoyed them fresh from the oven with some hand-whipped cream.

Last night I was doing the dishes while watching Jamie Oliver in TV. He was making a Thai red curry, which inspired me to do the same. It just so happened that I had finally brought my little mini processor home from Mum's place and after being used in Dunsborough to make Benoit's chilli crab, it's time to put it to some good use in my kitchen!

It's also not every day that I have all the fresh ingredients available!

I rummaged around for all the ingredients that I thought I would need:

Lemongrass
Ginger
Onion
Garlic
Kaffir Lime Leaves
Sea Salt
Birds Eye Chillies
Soy Sauce
Fish Sauce
Sesame Oil
Coriander

Using the mini processor, I blended all the ingredients together to form a paste - a really aromatic paste!

I fried the paste off with some olive oil in my Le Creuset pot. I then added some diced beef, potatoes and carrots and cooked it for a few minutes. The aroma was soooooo delicious!

I added a can of coconut milk, brought it to the boil and added some fresh curry leaves from Mum's house.

Simmer on low heat for about an hour and it's done.

Awesome awesome awesome.

I had actually intended for it to be a red curry but I didn't have any tomato paste so it ended up being a green curry!

This morning we used the remaining sourdough from yesterday's lunch to make cheesey toast!

I have never had vegemite on toast before so today was a first. I loved it! The saltiness with the gooey cheese is a perfect combination!

I enjoyed a few glasses of this wine tonight. A 2009 "Parliament of Owls" Cabernet Merlot from Golden Grape Estate in South Australia. Soooo smooth.

Whenever I roast chicken, I usually roast two pieces so I can have one the next day at work.

I was so tired after work today. I had to run around for a few hours to carry out some errands for the house so when I got home, I ate...

Chilli Tuna Spaghetti

...and then I napped. I got up to make a late dinner. Our theme for lunch at work tomorrow is curry so I suggested that everyone cook curry for dinner tonight and then take the leftovers to work tomorrow. Curry always tastes better the next day anyways!

I had a craving for a beef stirfry today so I had to make a stop at the shops to pick up some capsicum and snow peas.

Fresh vegetable are the key to a good stir fry.


Garlic, soy sauce, oyster sauce and lots of cracked black pepper.

I love cooking with my Le Creuset pots. For lunch today, I put together a simple pasta dish.

Angel Hair with Prawns, Leek & Cherry Tomatoes in Garlic & Chilli Olive Oil


For dinner, I spied a bottle of bechamel sauce in the pantry. I also found some beef mince in the freezer, so I made a beef sauce with a can of crushed tomatoes and grated carrot.


I layered it with thin slices of zucchini, mushrooms and the bechamel sauce.


Always finish off with bechamel on the top.

Oops, when I went to plate up, I realised to my dismay that I had used too much bechamel! I didn't want to store any in the freezer so I had emptied out the rest of the bottle over the top. Without some pasta to absorb some of the moisture, it resulted in a rather sloppy dish. However, it was still just as tasty! It was more of a casserole!

Natural Greek Yoghurt with Wholegrain Rolled Oats and Honey


For dinner tonight, I felt like curry. I used a piece of 'ossobucco' beef that I found in the freezer. We have a huge curry tree out the front and it's fantastic for whenever Mum makes curries. She will ask me to go outside and break off a few branches of the aromatic leaves for her.



Red Beef Curry

Ingredients:

  • 200g beef (usually chuck or gravy beef), cubed
  • 1 Tbn olive oil
  • 1/2 small brown onion, diced
  • 3 Tbn red curry paste
  • 1 Litre beef/chicken stock
  • 1 cup coconut milk
  • 2 Tbn tomato paste (optional)
  • 2 medium sized carrots, peeled and chopped
  • 2 medium sized potatoes, peeled and chopped
  • a handful of fresh curry leaves

    Method:
    1. In a pot, heat the olive oil and brown the beef.
    2. Remove the beef and set aside. Add the onion to the pot and sautee the onion.
    3. Add the curry paste (and tomato paste if desired) and fry for a minute or so until the flavours are released.
    4. Pour in the stock, return the beef, add the potatoes and carrots and bring to the boil.
    5. Add the coconut milk and the curry leaves.
    6. Simmer on a low heat until the potatoes are cooked, stirring occasionally.
    7. Serve with rice or crusty bread.
