LEEK & PORK MEATBALLS

Ingredients:

  • 1 Tbn olive oil
  • 1/2 medium brown onion, chopped
  • 3 cloves garlic, crushed
  • 3/4 cup leek, chopped
  • 2 cups bread crumbs
  • 1 tspn ground coriander
  • 1 tspn ground cumin
  • 1 tspn ground sweet paprika
  • 1/2 tspn ground cayenne pepper
  • cracked black pepper
  • 500g pork mince
  • 2 eggs

    Method:
    1. Heat the olive oil in a pan and sautee the onion, garlic and leek until softened.

    2. Put the bread crumbs in a large bowl.


    3. Add the spices.


    4. Add the mince.


    5. Crack the two eggs in.


    6. Add the sauteed leek mixture.


    7. Combine lightly (using hands is easiest!).


    8. Form into meatballs.



    LEEK & PORK MEATBALLS IN A RICH TOMATO SAUCE

    Ingredients:

  • 1 Tpn olive oil
  • 1/2 medium brown onion, chopped
  • 4 cloves garlic, crushed
  • 1 can crushed tomatoes
  • 1 Tpn Worchestershire sauce
  • Meatballs (as prepared above)
  • Spaghetti, cooked al dente

    Method:
    1. In a pot, heat the olive oil.
    2. Sautee the onion until softened, then add the garlic and crushed tomatoes.
    3. Simmer (add water if required) for about ten minutes.
    4. Add meatballs to sauce to cook. Turn over at least once and make sure they're coated in the sauce.
    5. Serve with spaghetti.
