In preparation for tomorrow's gastronomical festivities at work for Melbourne Cup Day, I got busy baking. I couldn't really think of anything else to make for our lunch tomorrow so I settled on quiche.

Bacon, Leek and Mushroom Quiche


The large one turned out more like a deep pan pizza because the pastry and filling sank down heaps after baking. The smaller quiches were much better. I need to find myself a deeper flan dish.

MOUSSAKA

I haven't really cooked with eggplant for a while. I bought three large eggplants for only $2.99 the other day. Using two of them, I made some moussaka tonight.

I cut the eggplant into 1/2cm slices and gently panfried them on both sides in some olive oil. You can also bake them in the oven. You just need them to soften up a bit.

I cooked sauce using some diced onion, crushed garlic, beef mince, two cans of crushed tomatoes, chopped parsley and basil.

I layered the eggplant with sliced mushrooms, grated cheese and the sauce.


I made bechamel sauce from scratch and
poured it over the top as the last layer.


Into the oven for about half an hour
until the bechamel became a lovely golden hue.

Victoria came over this morning and we went out to buy ingredients to do some Christmas cookie baking.

We intended to go home and poach some eggs for breakfast, but the lure of chips and gravy was too great. We succumbed.

At home, we set about making two batches of biscuit dough.


One vanilla, the other chocolate. Same as what we did last year.


I love the ones we coated in pink sugar crystals.


Victoria made a few that looked so much like dog poo!


As Victoria pointed out, these look like the invincibility stars in Super Mario!


We bagged them up in cellophane - now they're ready to be given away as gifts!


While our last batch of biscuits was in the oven, we made a quick lunch.

We marinated a piece of porterhouse in soy sauce, sesame oil, fish sauce and chilli flakes. We seared each side in the pan and after resting it for several minutes, we sliced it up for the salad.

We threw together some roughly chopped roma tomatoes, washed rocket leaves, sliced red onion and cubes of avocado. I added some olive oil and white balsamic vinegar into the remaining marinade and whisked it together to create a salad dressing. Yum!

Sarah and I decided to have a quick dinner in Northbridge before taking the train to Subiaco for the U2 360 concert. We chose this place because it wasn't busy and I've been curious about it since it took over Vultures Cafe.

We both ordered the $20 sirloin and chips special that was on the board, asking for it medium rare. It took a while for our steaks to arrive and we were both really disappointed that they were like cardboard. They were cooked all the way through and difficult to swallow. We were hungry though, and there was no time to order something else or have it recooked. We did mention it to the waiter when he came to clear our plates though. It's a pity it left a bad impression for us because it is a great location but I don't think I will be returning for the food.

After the concert, we walked into Northbridge and Sarah and I were so incredibly thirsty. We ordered a can of grass jelly each and polished them off immediately. We asked for a second one. So...thirsty!

The U2 concert was great, by the way.
The 'spaceship' stage really did look out of this world!

I love cheese.

Especially soft cheeses.

I bought this one from a store in Subiaco and shared it with my cheese loving work colleagues.

Tarago River Cheese Company's 'Jensen's Red' - $64/kg

I loved the saltiness of this cheese. It would be absolutely perfect with a glass of red to wash it down. I am going to have to remember the name for next time!

After work, I set about making a quiche for work tomorrow. Firstly, I blind baked a sheet of shortcrust pastry in a shallow dish.

I used diced ham and chopped sundried tomatoes. I combined some cream, milk, grated cheese, a couple of eggs and some cracked black pepper and poured that in.

Always one to multitask, I made dinner at the same time as I prepared the quiche.

Lunch
Mum's Nasi Lemak with Ikanbilis, Fish & Omelette

I love nasi lemak. Love love love it!

I spent the day busying myself with domestic duties. I took Simba for a walk. I gave him a hair cut. I gave him a bath. I did a water change for my aquarium. I arranged the new plants I bought (yesterday) in the aquarium. I vaccuumed. I mopped.

I had a macchiato to relax.


I love how lush and tropical my aquarium looks when I have plants in there.
If only the fish wouldn't eat them up so fast!


My guppy fry are doing well.


Just to round off the day at home, I baked some muffins to take to work for morning tea tomorrow.

In them I put ham, semi sundried tomatoes and fresh parsley. Oh, and lots of cheese. I forgot to take a photo of them after they came out of the oven!

A few days ago I found some time to prepare some mini pizzas. I like to do this once in a while so that I can freeze them to be convenient snacks at a later date.

I made some with Leggo's pizza tomato paste, chorizo,
kalamatta olives, red capsicum, onion and shredded Tasty cheese.


I also made some 'Hawaiin' pizzas.


I usually wrap them in aluminium foil but tonight I decided to wrap them in cling wrap. This way I can see what pizza is inside instead of having to write it on the foil.

I had to do some quality control.

I stayed home from work today to recover from my relapse yesterday. This is turning out to be a really miserable last two weeks for me overall. I hope next week is better.

Mum brought home some soup for me from her work.

Chicken & Asparagus Soup


For dinner I threw together something quick.

I cooked the onions first, then threw in the mushrooms and pork chipolatas for a few minutes. I didn't cook them all the way through. I removed them from the pan and sliced them up. They can finish cooking in the oven.

I wrapped the mixture in several sheets of filo pastry that I had brushed with butter. I brushed butter over them after they were rolled up and baked them in the oven until the pastry was a golden brown.

I served with asparagus spears and some of Teresa's chilli jam I found in the fridge. The chilli helped relieve my congestion for a while.

I wasn't satisfied after though...I really wish I had made soup instead. Nice hot, hearty pasta soup.

Before work today, I set to work in the kitchen to make meals for the next few days.

On the menu: Lasagna & Eggplant Moussaka

I defrosted homemade tomato sauce and lamb mince overnight. All to do today is to make the bechamel sauce and assemble the dishes.

I googled a quick recipe for the bechamel sauce and set to work making it. I think in hindsight I must have read the measurement for the plain flour wrong. I think instead of using tablespoons I should have used teaspoons. After adding the warm milk, the mixture was really thick. It resembled choux pastry. I thought 'Do I start from scratch or do I add more milk to try to thin it out?' I decided to try adding more milk. I added almost a litre and managed to get it to a spreadable consistency. I didn't want to waste my other ingredients so I did a test run.

In a small ramikin I put a spoonful of the lamb mince with the tomato sauce, and a spoonful of the bechamel sauce. I baked it for about fifteen minutes.

Verdict: Yum!!

The consistency of the bechamel was thick and creamy and it was like eating a little pot of lasagna without the pasta. Time to continue with the dishes!


Eggplant Moussaka
Layers of eggplant, zucchini, the lamb and tomato mixture and bechamel sauce on the top to finish it off. I grilled the eggplant and zucchini on the sandwich press first.


Lasagna
I layered instant lasagna sheets, the lamb mince and tomato mixture, and the bechamel sauce. Finish off with a layer of bechamel.


I got stuck into the moussaka before work!
