Supper
Hokkien Noodles with Seafood


I'm having a little party tomorrow night despite having to work all day so I thought I'd better do as much preparation tonight as I could. Here is the recipe for Alice's awesome oyster roll that she brought to my High Tea recently.

OYSTER ROLL

Ingredients:
  • 3 x tins smoked oysters
  • A squeeze of lemon juice
  • 250g Philadelphia Cream Cheese
  • 1 Tbn chives, finely chopped
  • 1 Tbn parsley, finely chopped
  • 1/2 onion, finely chopped

    Method:
    1. Roll the cheese out between two sheets of aluminium foil to about the size of an A4 sheet of paper.

    2. Remove the top sheet of foil.
    3. In a bowl, drain the oysters and mash with a fork.
    4. To the oysters, add the lemon juice, chives, parsley and onion. Mix.

    5. Place the oyster mixture along one end of the sheet of cheese and roll it up like a sausage roll.
    6. Score the top of the roll or garnish with some parsley and chives.

    THURSDAY LUNCH AT WORK

    It's funny how even when we don't have the time to organise our Thursday lunch properly, that people tend to now just bring in something to share anyways. It's awesome!

    Long came over and helped me finish off my driveway today - WOO!

    After a few hours of hard work, I put together a few burgers and we sat in the garage to eat them. The weather was beautifully warm and it was great to admire our work while gobbling up our food.

    Lamb Roast for dinner!

    It's not often I get to have roast lamb or beef for dinner because the roasts are much too large for one person to eat. I'd be stuck with leftovers for a few days. However, at my local IGA I found lamb in small roasting portions so I snatched one up!

    Oh dear.

    I have been eating on the run a bit lately and today I noticed that the floor of the passenger side of my car is littered with the various takeaway wrappers from the past few weeks.

    Sunday breakfast!

    I bought a pork hock from the shops the other day and have been looking forward to a night at home to spend a few hours making one of my favourites.

    Ooh I love how tender the pork hock was...so juicy and tasty! I especially love that the butcher had sliced the hock so it was in smaller pieces and easy to tear the meat off.

    Mum happened to have bought this Vietnamese Pork Roll and gave me some.

    STEAMBOAT NIGHT!

    I think this is our first steamboat night this year at Ling and Shallen's place!

    The day was beautifully sunny and warm but as the evening closed in it became cloudy, overcast and then began to rain as we sat down to dinner. Perfect.

    I miss working in cafes and bars.
    I miss frothing the milk.
    I miss the smell of gorgeous coffee beans when you open a new bag of coffee.

    GIRLS NIGHT!

    I had a few girls over for dinner and drinks tonight. Initially we were just going to have snacks but I was able to finish work early and headed to the shops to grab some groceries to make dinner.

    I made the dressing with the pan juices from the chicken and some mayonnaise.


    Poh Chin brought us some Macarons from Jean Pierre Sancho for dessert.


    Sarah and Fleurette made us Apple Martinis!

    We went through three bags of microwave popcorn. And by 'we', I mean 'me'.

    I roasted some chicken breast the other night with lots of spicy spices. I don't usually eat chicken breast because you need to cook it just right or it's too dry. And even if you cook it just right, if you don't eat it immediately, it goes dry.

    So, I usually roast chicken breast and shred it up for salads or sandwiches.

    A healthy roll for lunch.

    Mum brought over a bag for me tonight. Some are hers that she made over ten years ago (you can keep them in storage for yonks!) and some are ones that she bought from someone who makes them.

    Fresh tomato slices, bocconcini, salad leaves and a drizzle of Ollo olive oil.

    Dinner was skipped in lieu of nibblies and drinks!
