After getting my last shift over and done with tonight, I came home to find one of my favourite dishes waiting for me for dinner. At 1:18am (Wednesday) I sat down to enjoy a bacon and egg omelette my Mum had made for me. She dices bacon and tomatoes, fries this up with some mixed herbs and serves it in a thin egg omelette with a side of rice.


I'm so looking forward to some down time for the rest of the week!
