Potato Bake with Provolone

This had to be the BEST EVER potato bake I have ever made!! I was trying to think of something to have as a side dish with my chicken mignon (which I had prepared last night) and decided to indulge in a heavy, creamy potato bake.

I layered thinly sliced potatoes and provolone cheese in a ramikin and seasoned with fresh chives from my garden and some cracked black pepper (in each layer). Once I got to within a few centimeters of the ramikin, I poured some cream over the top and baked it in the oven. To test if it's cooked, you poke a skewer into it and expect it to go through easily (ie the potato is cooked and soft enough for the skewer to pierce).

straight from the oven - you can see
the oil on the top still bubbling!
