Hurray! It's days off for me now. I took a lobster out of the freezer (the ones that I bought from Progressive IGA when they were on sale for only $9.99 each!) and put it into the fridge to defrost overnight.

Dinner
Lobster with Chilli, Parsley & Lemon Juice
Roasted Vegetables
Melted Butter


I had the vegetables roasting in the oven and just when they were almost done, I popped the lobster in there to warm up. For the lobster, I just drizzled on a mixture of chopped parsley, chillies and lemon juice.

It was deliciously light and mouthwateringly tasty.
