Mum's Mee Siam
I felt like fried beehoon and asked Mum if she would make some this week. She happily obliged and went all out to make mee siam. To accompany the fried bee hoon, she boiled eggs, fried prawns and diced tofu.
I had a slice of the quiche I made last night. I was so hungry while waiting for my mee siam to warm up in the microwave, that I gobbled half of it cold and then decided to warm the other half of the slice up when the mee siam was ready. Delicious both cold and warm.

Takeaway!
Jocelyn and I decided we wanted Japanese tonight so we drove out to get takeaway so that we could get home in time to watch tonight's episode of Masterchef.
I asked for the 'Bento Box C' set, which came with the unagi on a bed of rice, tempura, miso soup, salad, nori rolls, and a choice between gyoza or spring rolls. I opted for the spring rolls.
I also ordered a serve of these delicious little fried octopus balls - I absolutely love them! I was delighted to see that they served them with the flakes of fish, which is how they prepare them in Singapore. Even Mum couldn't resist devouring half of them.
One of the lovely ladies at work came across a wonderful bargain at IGA yesterday.
She knew I would love to get my hands on some of it at the unbelievable price of $5.49 and bought me some. I decided to make something for morning tea tomorrow at work that would incoporate the mascarpone.
I flicked through some of the recipe books I have on cakes and sweets and came across a profiterole recipe. It seemed easier than making muffins, which was my original idea.
I made the choux pastry - something I have not done since home economics class back in high school when we were making chocolate eclairs.
Firstly, I had to warm up some milk and butter in a pan and then add plain flour to it, whisking it in until the mixture formed a soft dough that came away from the sides of the pan. The only thing I imagined could go wrong was that I burnt the mixture. I was delighted when the pastry did not burn and I seemed to be right on track.
I let the profiteroles cool down while I ate my dinner.
For the filling, I whipped some mascarpone with sugar and a splash of coffee liqueur. It tasted awesome! I filled the profiteroles with it and arranged them onto a plate. I couldn't find any icing sugar in the pantry, so dusted them with some fine chocolate powder instead. The weather has been so cold that there was no need to put them into the fridge overnight. Can't wait to eat them tomorrow!
