I sauteed some leek, onion and speck in olive oil, added some water and some of my homemade tomato sauce. As the sauce simmered, I added the scallops in to cook and then added al dente spaghetti. I did all this really quickly so that the leek wouldn't be overcooked and become soggy.

These scallops were so succulent and juicy. I try very hard not to overcook them or they get tough. These were done perfectly...if I do say so myself.
I also made some roast chicken to take to work over the weekend.
