One of my favourite dishes that Mum makes is bean sprouts with salted fish, which I made tonight. I knew there was salted fish in the fridge somewhere and I put on some gloves before going to work to pick the dried fish meat off the bones. It's sort of like fish jerky. Simply stirfry the bean sprouts with some chopped garlic, soy sauce and the salted fish. Easy peasy.

Curry always tastes even better a day or two after it's been made! The sauce gets thicker and the potatoes absorb more of the flavour. Love it!
