There's been a bag of baby calamari in my freezer for a while now and I've been meaning to get around to using them to make stuffed calamari. I finally found the time to do it tonight.
I made a stuffing with cous cous, finely diced onion and hot Mexican salami.
I stuffed each calamari and held them closed with a toothpick.
I poured some rich homemade tomato sauce over the top
and baked it in the oven for about half an hour.
Yummo!
I stirred the rest of the sauce through some Rigatoni for dinner.
