A few nights ago I went to Ling and Shallen's place for a roast chicken dinner. There was a gorgeous amount of delicious juices left in the baking dish and I took some home with me.

In the fridge, the juices had solidified so I simple shook the container around and watched the juices separate from the fat.

I dissolved it in some boiling water - this will be the stock for my risotto dish!

I rehydrated a mix of 'forest mushrooms' and finely chopped them.

For the last day of summer, nature decided to open up the skies and pour bucketloads of rain onto us. Our street flooded, it hailed and rainbows appeared in the sky.

My chilli plants got a good watering and sprang back to life.

I love my eggs sunny-side-up and with some cracked black pepper and a smidgeon of sea salt.

For dinner Mum had cooked a few dishes so I didn't bother with making dinner tonight after work. I was much too exhausted to.

I don't really eat much fried fish. I prefer it to be steamed. But I love the roe sacs! Christina and Jocelyn aren't fans so I always get to eat them!

Tonight I had planned on stopping by the shops on the way home to buy some chicken for dinner. I was going to roast it at home before taking it to Ling and Shallen's for dinner, but I had to stay back at work so I had a ten minute window to powerwalk through the shops to grab some chicken and then get home, marinate it, and then pack it up with some salad and other things and drive over to Ling and Shallen's.

I picked such a great day to roast chicken in the oven - I should have just strapped the chicken to the top of my car and it could have cooked by the time I got to their house! While the chicken was in the oven, I prepared our starter while we chatted.

The basil in my garden is growing beautifully but I need to remember to keep using it so that it doesn't go to waste. It wasn't until after we'd finished that I realised that in my haste, I had forgotten to drizzle some olive oil over the bread and add a sprinkling of cracked black pepper. Ah well, it tasted just as fresh and we had some chilled white wine to wash it down with.

Ling threw the corn in with the chicken for the last ten minutes or so and they were cooked perfectly!

Lunch at Work
Chicken & leftover Salad Roll

Yep, after our feasts on Thursdays, we usually spend Friday enjoying any remaining food. Today we gathered around the table and enjoyed some roasted chicken that Brendan brought in with the salads that were left over.

To commiserate Rebecca's last day with us today, she brought us cake for morning tea. It was a really really rich chocolate cake. I asked for a tiny sliver.

I also had some of this blueberry jam & cream sponge roll.

I felt so sick after that cake...I needed a nap!

I cooked this last night and had it for supper. Squid, mussels and prawns, all tossed in some olive oil with garlic, onion, chilli and saffron. Yum!

Yes, the folks at work decided it was time to have a healthy lunch this week! The salads that everyone brought in were awesome!! We had such variety and despite still eating heaps, at least it was healthy!
