On a piece of baking paper, I placed the salmon steak in the centre and threw on some sliced ginger and fresh coriander. I drizzled some olive oil over the steak and squeezed a bit of lemon juice before wrapping the steak up and popping it into the oven to bake.
When the salmon was almost done (it doesn't take long), I panfried the rest of the broccolini I had from last night in some garlic and butter. I also made some mashed potatoes. Royal Blue potatoes, butter, milk, and salt and pepper for seasoning.
I was crossing my fingers that the salmon would not get overcooked. It came out perfect.
