I ate alot today. I don't know whether it's because today I feel relatively migraine free or if it's just because I'm on the night shift at work and am bored.

Finally back at home, I quickly set to work in the kitchen making supper and food for work tomorrow. I'm on call tonight so want to get into bed as soon as I can.

I decided to use some beef mince from the freezer to make shepherds pie. I just made it how I usually do - olive oil, garlic, onion, tomato paste, canned tomatoes, fresh thyme from my garden, white wine and worcestershire sauce. I also put some celery in it tonight to use up what I had in the fridge.

When the sauce was ready, I spooned some into a couple of pie-sized baking dishes.


I mashed some potato with butter, sea salt and milk until it was a creamy texture and plopped it into the baking dishes to cover the mince mixture. Using a fork, I patted the mashed potato down to cover all gaps and then made a criss-cross pattern over the top. This will help give more surface area to the mash and help it brown and get crispier. Into the oven!



With the rest of the mince mixture, I used it as bolognaise sauce. I cooked some spaghetti - the rest of the wholemeal spaghetti in the pantry. I ate wholemeal pasta a few times a while back and didn't really like the texture. It's tougher than regular pasta and sort of drier. I usually blend it with some regular pasta but tonight I just wanted to finish it off. It wasn't too bad tonight.
