Mum's Fish Congee

I stayed in bed all day with Simba until the early afternoon when we heard Mum had arrived home from work. Whenever I'm sick, I usually lose my appetite. As little kids growing up, Mum used to always make rice porridge for us whenever we weren't feeling well. It's the standard whenever-you-are-sick dish for Asians. It's not oily and with a sore throat we can still manage to swallow it. You can have it simply as it is, or dress it up a bit with a whole variety of accompaniments.

To this day, it's one of the simple pleasures that my sisters and I still turn to Mum for whenever we're sick. And Mum's always happy to oblige.
