Tonight I was stumped for dinner. I stared in the freezer for a while and then took some prawns out to defrost while I took a shower.

Can't go wrong with prawns.


SAMBAL PRAWNS

Ingredients:

  • 10 prawns - peeled, deveined and sliced into half lengthwise
  • 1 Tbn olive oil
  • 1 Tbn sambal belachan
  • 1 Tbn water
  • half brown onion, sliced
  • half red capsicum, sliced
  • enoki
  • fresh coriander

    Method:
    1. Heat oil in a pan.
    2. Add sambal belachan and onion. Fry for a few minutes.
    3. Add capsicum, enoki, prawns and water.
    4. Cook until prawns are cooked.
    5. Serve with fresh coriander.
