I woke up at about 11am today - didn't get called out for work during the night at all!
I made myself a coffee, turned the TV on, and opened up some windows and doors to let some fresh air into the house. I watered the plants and then feeling hungry, I looked in the fridge to see if I could make something with the vegetables left in the fridge.

One idea sprang to mind - Pepperonata. Well, my quick version of a pepperonata!
I basically fried all the ingredients together with some garlic, olive oil, balsamic vinegar, sugar and water. It turned really good, nice and sweet from the capsicums.
A friend at work brought in a seaweed snack she thought I might like. I loved it!! It was crab flavoured. I'll have to find some to take with me to Geraldton next week.
I popped by my own home before work and saw there were some leftovers in the fridge so I took some with me. I made some fresh Vietnamese spring rolls to have for dinner at work. A really nice, fresh, light snack. I say snack because I only had three and it wasn't enough to satisfy me as a meal for dinner.

But that's ok, because when I got back to my 'sanctuary', I had leftovers from the bee hoon soup I made the other night and had that for supper before bed.
