Lunch at Work
Mum's stirfried Beans & Bacon with Steamed Rice


At home, I felt like noodle soup and set about soaking the bee hoon in water. I looked in the fridge and spotted some bean sprouts, fresh Vietnamese mint and I remembered I had some laksa paste in the fridge door. My brain whirred as I drained the bee hoon, put a lid on the container and put it into the fridge for use in the near future. I went to the pantry and took out some Vietnamese rice noodles and proceeded to boil water in a pot to cook them.

I was having LAKSA!

Ingredients:
Laksa paste
peeled Australian King prawns
chillies stuffed with fish paste & chicken mince
frozen clam meat
sliced fish cake
bean sprouts
Vietnamese mint


I boiled some water and added the laka paste to it. After a few minutes, I added some coconut milk and then let the soup simmer for a few minutes before I added all the ingredients, except the bean sprouts and mint. In a large soup bowl, I placed the cooked rice noodles and bean sprouts. When all the ingredients in the laksa soup had cooked, I poured it all over the noodles bean sprouts in the bowl and garnished with the Vietnamese mint.
