The drive to work this morning infuriated me. I was literally blowing steam out my ears and nose. Those frackin' cyclists! I got caught behind them on the Causeway, leading onto Riverside Drive. There were about two hundred of them and they were riding in a throng that spanned both lanes. No cars could get past and we were all travelling just under 40k/p/h. Cars were honking their horns (me included) and those cyclists just would not give way. A few years ago I sent an email to the police complaining about them and they basically gave me the run around telling me to contact Main Roads. Main Roads told me to contact Cycling WA. Nothing was resolved but Cycling WA informed me that cyclists are only allowed to ride two abreast on the road. I was so angry, I took my camera out and took some photos so that I had proof. When I got to work, I phoned the police and lodged a complaint but I will have to go in to a station to actually show them the photos I have and to make it a formal complaint. I've had enough. Each time I see the back of my car I'm reminded of the time a cyclist hit my back bumper and rode off with the other hundred or so cyclists he was with. Aargh!
I cooked some penne, mixed it through and cut some fresh chillies
After work, I came home to spend a bit of time in the garden. I gathered some cos lettuce - it's grown back really quick since I cut some and gave it to Ling and Shallen. Fleurette came over and we drove to Kong's house to give him some cos lettuce and then went to Bunnings. I bought more plants and now need to find some room in the garden to plant them! I bought some dill, jalapenos, another chilli plant, more celery seedlings and get this - pineapple sage! It smells so deliciously fruity! Can't wait to use it.
For dinner I made a salad using some of the cos lettuce from the garden. I also made a pasta to go with it.
- Wash cos lettuce and rip into smaller pieces.
- Place some bacon and proscuitto in a cold pan and turn the heat on to fry lightly (no need to use oil) - add to the lettuce in a bowl.
- Grate or thinly slice some provolone cheese and add to the bowl.
- Roughly crush some almonds and add to the bowl.
- Add caesar salad dressing and toss through salad.
Caesar salad is usually made using cos lettuce, bacon, croutons and parmesan. I didn't have parmesan so I used provolone. I usually make my own croutons but didn't have time tonight so the crushed almonds gave it a bit of crunch instead.
- Fry some bacon and garlic in a pan (no oil).
- Add mushrooms and clam meat.
- Add some white wine to deglaze the pan.
- Toss al dente penne through, adding some olive oil.
- Just before turning the heat off, add some salmon caviar and toss through.
- Serve with a spoonful of the uncooked caviar and fresh chilli.
Now, the way you cook bacon is to put it into a cold pan and then turn on the heat. As the pan heats up, the oils are drawn out of the bacon so you don't need to add any cooking oil.
This pasta dish turned out soooo well! You get all these different flavours meshing together - the bacon, the clams and the caviar. *drool*
