I slept in until the early afternoon today and then went grocery shopping. I'm having Ivy, Benoit and Dau over for dinner tonight.
Rosemary Roasted Chicken with Mushroom Risotto
I used the new baking pan and rack I bought from IKEA on the weekend. I arranged the maryland pieces and drumsticks on the rack, then stuffed a small sprig of fresh rosemary beneath the skin of each piece. I combined some olive oil with verjuice, chilli flakes and dried thyme and brushed this mixture over all the chicken pieces before putting the tray into the oven to roast for about fifty minutes.
For the risotto, I used some onion, garlic, swiss brown mushrooms and Vegeta vegetable stock. When the chicken was ready, the skin was crisp and golden.

Later at night, I got the munchies and had a bowl of the 'Hot & Spicy' instant noodles I found at Coles. These are the exact same ones that I had in Hawaii!
