Mrs Macs Spinach & Ricotta Roll
The last time I had one of these was back in uni days. I had to heat it up in the microwave though because the Red Cross tuck shop was about to close and I bought this straight from the fridge.
After work tonight, despite my tiredness, I went to the fridge to take stock of what I could use to make some soup with.
If found a leek, carrots and celery. I couldn't be bothered defrosting some chicken so it was just going to be vegetable soup!
As I was cooking the vegetables to soften them, I realised I had some speck in the fridge so I diced it up and added it the vegetables that were sweating down nicely. The aroma was delightful!
