Today I didn't really have any plans so I went to Carousel and had some 'me' time.

I spent about an hour and a half finishing off the book that I've been reading. I would have preferred to be at a nice outdoor cafe, but the weather was gloomy and it would have been much too cold to sit outside.

Afterwards, I did some grocery shopping and then headed home.


PIZZA FOR DINNER AGAIN!

That's right...I was in the mood for pizza again tonight.

I got out some Old El Paso wholegrain tortillas and prepared all the ingredients.

I made four different pizzas. I spread some tomato paste on all the tortilla bases and sprinkled grated mozzarella on them, except for the margarita.

I baked the pizza base with cheese (normally I would have used goats fetta but Jocelyn wanted mozzarella) with the other pizzas and then just before serving, arranged the fresh rocket and pumpkin pieces that I had roasted while preparing the pizzas. I also sprinkled on some pinenuts and drizzled the pizza with dressing - olive oil and balsamic vinegar that I whisked together.

I didn't have enough fresh basil so I used rocket instead. Yum!

Jocelyn, David and I sat around the kitchen bench sharing them. I washed it all down with a beer. A really healthy and light meal. I say 'meal' because this was really just a warm up for me. I had dinner planned...

Lemon Grass & Chilli Noodle Soup with Beef & Pork


I boiled some water in a pot and threw in a stalk of lemon grass and a tea filter bag containing some dried shrimp and star anise. I also added some dried chilli flakes and Vegeta stock. Once the soup had simmered for about ten minutes, I added some frozen beef balls and cooked sliced pork belly that was leftover from what Mum cooked yesterday. I cooked the Vietnamese rice noodles separately. Served it all up with some bean sprouts, sliced onion, deepfried shallots, pepper, fresh coriander and chilli.
