Lunch at Work
Lemon & Marjoram Chicken with Roasted Beetroot wedges


I made this last night while preparing dinner.

In a baking pan, I drizzled some olive oil and then placed some slices of lemon in the bottom
and some fresh marjoram leaves from the garden.


I scored the top of the chicken maryland and seasoned with salt.


I roasted some beetroot, that I had peeled and cut into wedges, in a separate baking dish at the same time as the chicken. Today while eating it, I was a bit disappointed because I think the rind of the lemon had left a rather unpleasant taste to the chicken. Perhaps it was because the lemons were not entirely ripe yet.


PIZZAS FOR DINNER!

Back at home, I felt like pizza. I used a wholemeal wrap for the base. I spread some tomato paste over it, then added a sprinkle of dried chilli flakes, finely sliced brown onion, fresh basil leaves, sliced mushroom, grated mozzarella and raw prawns sliced in half lengthwise.

Into the oven for about fifteen minutes until the prawns were cooked and the cheese has melted. I drizzled a bit of olive oil over the pizza before slicing it up.

I bought this bottle for $10. Pretty good value.


I enjoyed my pizza with a Pure Blonde,
with Simba looking on wishfully.


Because I'd made the pizza using a wrap, it was really light. I was still hungry so I made a second pizza.

Hawaiin - tomato paste, sliced ham, pineapple chunks & mozzarella.
