TUNA MACARONI PASTA BAKE

Ingredients:

  • 2 cups macaroni, cooked al dente in salted boiling water
  • 1 small can of tuna (the sandwich variety)
  • 1 Tbn olive oil
  • 1/2 brown onion, sliced
  • 3 cloves garlic, crushed
  • 2 Tbn tomato paste
  • 2 Tbn fresh basil (I used flowers)
  • 1/2 cup grated Tasty cheese

    Method:
    1. In a frying pan, heat the olive oil.
    2. Sautee the onions for a minute, then add the garlic and cook for a minute.
    3. Add the tomato paste and then add the tuna and cook for a few minutes.
    4. Stir in the pasta and cook for a minute.
    5. Layer pasta mix in a baking dish and sprinkle the basil over it.

    6. Sprinkle cheese over the top and bake in the oven for about fifteen minutes on 180degrees until the cheese has melted.

    I had some friends over for coffee in the evening so I threw together a quick dessert.

    Puff Pastry with Mixed Berry Coulis
    dusted with Icing Sugar


    Served with Vanilla Ice Cream!


    I was too lazy to make dinner later (dinner for me this whole week has been at about 2am because of the night shift) so I just threw together some snacks.
