We had every intention of making today an Irish themed lunch but after browsing the internet, we were all a bit reluctant to base a lunch on corned beef, potatoes and cabbage. So, we broadened the scope and had a lovely lunch!
Last night I slaved away making this Shepherds Pie. It was basically a beef casserole topped with creamy mashed potato. We had mini pies, sausage rolls and quiches cooked in our mini oven. Green cordial! Coconut Rice with Ian's homegrown Mangos Cupcakes!
