I totally forgot it was my birthday today as I walked into work. One of the girls wished me 'happy birthday' and it hit me - today is my birthday!
Christina's Ham & Cheese Quiche
Ooh, I have to say, this quiche was really good. Light yet eggy and with the right amount of saltiness from the ham. Or perhaps she used bacon?
I refused to let anything at work get to me today. I ignored or avoided everything that would upset me and kept myself busy in my little corner listening to ABBA on my mp3 player, hooked up to my mini speakers, and getting my work done.
On the drive home, I was considering calling a few people up to see if they wanted to catch up or go out for coffee since it is my birthday. By the time I got home, I was happy to just get into my PJ's and make dinner. At Cannington Fresh I bought some kipfler potatoes and baby asparagus spears. Although I'm not the biggest fan of asparagus, I find 'baby' vegetables always taste good. Juicy and sweet.
This is my first time of using kipfler potatoes. I drizzled some olive oil over them, sea salt, cracked black pepper and dried thyme. I wrapped them in foil and baked them in the oven for almost an hour.
