Jocelyn and I took Mum to dim sum today.

EMMA'S SEAFOOD & DIM SUM RESTAURANT

We went to Emma's because I had work in the afternoon and we didn't want to drive all the way to the city. When we arrived, there was no large crowd outside so that was good sign. We went inside but they were full so we took a ticket and went back outside to wait. A few minutes later, several people walked in and were ushered to a table. This really annoyed us since we had been there first. Jocelyn went inside to ask if there was a table for us and why that group had been seated before us. I assume the man on door duty was the owner and he told her that it was a group of five and there was a table for five people available. Not really a good enough excuse for us. At this time, there was a table that became free and he asked us to take it. It was a table that could seat six people.

There was one trolley that I could see with the steamed dishes. It was sloooowly making its way from table to table. One of the hold-ups was that there were a few tables of non-Asians sitting around us so they didn't know what they wanted to order. Another hold-up was the fact that it was far too crowded for the trolley to actually be wheeled up to every table. We ended up just ordering some dishes.

chicken feet

shark fin dumplings

No, these don't really have shark fin in them. They're named 'shark fin' because they supposedly resemble a shark's fin. At first glance they looked rather opaque and Jocelyn confirmed that they were on the cold side and had probably been sitting on the trolley for some time.

stuffed eggplant

This tasted rather bland. There was some sort of mince meat stuffed within the slices of eggplant, but it was so tasteless I couldn't tell you what it was. There was far too much sauce and there just wasn't any zing to this dish.

After finishing these first few dishes, we waited for the others that we had ordered. About ten minutes probably went past and they still didn't arrive even though we saw some being taken out to other tables. They'd obviously misplaced our order. We asked for my favourite - the prawn dumplings. They were apparently still being cooked.

We were getting rather annoyed at this stage. The next few dishes we get had better be good to turn this meal around.

har gow

Oh my god this was awful. As soon as Jocelyn went to pick one up, the dumpling pastry just came right off the prawn. It was gooey and stuck to the bottom of the steamer. I recall myself having an actual frown on my face as I tried to get one. The dough just came off in clumps. I picked up the prawn stuffing and it was disgusting. It didn't taste like prawn at all. What an utter disappointment. This dish is the reason I come out for dim sum! It makes the whole meal for me! *shakes her head*

The owner's sister came by and Mum asked her about our dishes that we had ordered and she went to check on them for us.

rice flour rolls with pork

These were so bland. The rice flour roll was flat. Limp.

We'd had enough. We got up, paid the bill and drove home, our stomachs feeling cheated with such a crap experience. I remember the first time I came here to eat with Marissa and it was fantastic! The quality of the food has really gotten poor. I won't be going back there for a while. At least not for dim sum. The only thing good about the dim sum here today was the chicken feet. Mum and I agreed on that. Jocelyn refused to try them.

Dinner at Work
Uncle Fong's Prawn Noodles

Mum went to Vernon's birthday dinner last night and she brought me some leftovers to take to dinner tonight. I had it with some of her chilli - delicious!

Supper
Prawn Ravioli Soup

I had some of the wantan wrappers remaining in the fridge so I used them up tonight to make ravioli. Mum had defrosted some pork mince for me. To it I added some finely chopped onion, chilli and a dash of soy sauce.

I used dried salted fish to make the stock for the soup.

I put the fish in a tea filter bag.

I'm getting really fast at making these ravioli!

Lunch
Mum's Loh Mai Kai

Supper
Tom Yum Bee Hoon Soup

I had a craving for laksa tonight. I got home and went straight to the fridge to see if we had any laksa soup paste. I spotted a jar and rushed off to shower and change into my PJ's before returning to the kitchen to cook.

Alas! I don't know whether it was my exhaustion after a hectic night at work, or a matter of me seeing what I wanted to see. The jar of paste in the fridge wasn't laksa paste...it was tom yum paste! I stared at the words on the jar and don't know how I managed to read it as being laksa. I already was halfway through preparing the food, so I just had to sigh and psyche myself up for tom yum.

Supper
Bee Hoon Soup with Beef Balls, Prawns, Chilli & Wombok

Lots of spring onion and chilli to go with it. Unfortunately, tonight I couldn't have a glass of wine to go with it because I was on call.

Simba had me really worried...he was throwing up everywhere and I began to panic because he looked so miserable and I worried he had eaten something that might be toxic to him. I also worried that I might get paged to go to work and I couldn't leave him home alone nor bring him with me if he was vomiting everywhere. Luckily Mum came home earlier than usual and he seemed to feel better after getting a bit of affection from her.

At one point, I was looking at him as he looked back at me with miserable eyes. I was so close to crying and taking him to the vet. I hate it when your dog is sick. It's one of the worse feelings in the world when you feel helpless and they can't talk to you to tell you what's wrong. Imagine how I'm going to be like with a baby - probably rushing off to the emergency room every time it hiccups!

Snack at Work
Salmon with Salad

At home, I placed the raw salmon fillet skin side down on a piece of baking paper and seasoned it with cracked black pepper. I then wrapped it up and put it into a plastic takeaway container at at work I cooked it in the microwave. I wasn't sure how long to cook it for, so I just the preprogrammed settings for 'fish'. The microwave cooked my salmon for four minutes and when I unwrapped it, it was beautiful!

I gently rolled the salmon off the baking paper and into my container of salad. It was delicious. I forgot to bring dressing for the salad, but the oils coming out of the salmon was enough to 'dress' the salad.

I definitely have to cook salmon this way again in future. A really easy, fuss-free and mess-free way of having a delicious cooked meal at work. Not to mention really healthy.

Supper
Bee Hoon Soup with Beef Balls, Enoki & Wombok

After this huge bowl of noodles, I still felt like something else. Something sweet.

Midnight Indulgence
Mascarpone & Cream with Berries

Oh my god! This was utterly crazy to eat at 3am in the morning!! Needless to say I couldn't get through it all so it went into the fridge for another time.

Lunch
Mum's Lasagne

Last night I had the idea to make some sweets to take to work today so the girls can have morning tea tomorrow. I had mascarpone in the fridge so I decided to make mini tartlets.

Blueberry & Mascarpone Tartlets

I baked the tartlet shells last night before going to bed. I used some short crust pastry to line some mini tart cases.

I lined each one with a square of baking paper and then placed three ceramic blind baking beads in each. I recently bought these from Kitchen Warehouse on one of my walk-throughs. Each time I go grocery shopping at Carousel, it's part of my routine to walk through the store. Even when I have nothing to buy. I just walk through, have a browse at pretty much the same products each time and more often that not, still manage to walk out with a purchase.

Kool Mint tarts

Haha - they sure look like Kool Mints don't they!?

Alas! I left the pastry in the oven just a few minutes too long and they were a bit on the crunchy side. They weren't burnt...just crunchier than they should be.

I also made the mascarpone mixture and blueberry compote last night.

Sweet Mascarpone Filling
1/3 cup sugar
1/3 cup thick cream
1 cup mascarpone

Using an electric beater, blend these ingredients together until stiff peaks form.

Blueberry Compote
1/3 cup frozen blueberries
1 tspn balsamic vinegar

In a small pot, heat up the blueberries. When they're warmed up, let them cook for a few minutes and then add the balsamic vinegar. Cook on low heat for several minutes until it starts to reduce and thicken. Add a splash of water if it initially is dry.

Usually I add some sugar when I'm cooking berries like this but the mascarpone mixture is rather sweet enough.

So, having prepared everything last night, all I had to do today was simply pipe the mascarphone mixture into the tartlet shells and then I added a blueberry to each.

Dinner at Work
Salad with Sardines

I didn't have time to sit down for a proper dinner tonight because it was incredibly busy, so I made sure I had my shot of protein (hee hee) by quickly scoffing this salad. Mixed salad leaves, sliced red onion, sundried tomatoes, and canned sardines with olive oil and balsamic vinegar dressing. Later I managed to eat one of my beef pies although by the time I got to it after heating it up, it was cold.

Supper
Prawn Ravioli in Asian Broth

I used up the rest of the prawn mixture and made ravioli. For the soup, I boiled some water that I seasoned with soy sauce, fish sauce, aniseed and dried salted fish. I put the aniseed and salted fish in a little filter bag that I use for when I made tea using loose tea leaves. This means I don't have to fish out the bits of fish and aniseed - I simply remove the filter bag with its contents and discard it.

Tonight I am making some pies to take to work.

Red Wine Beef Pies

  1. In a pot that can go into the oven, brown some chuck steak that has been roughly diced into same sized pieces in some olive oil.
  2. Remove the beef from the pot and put aside.
  3. Sautee some diced onion and crushed garlic in some olive oil in the same pot. Add more olive oil if required.
  4. Add some sliced celery and roughly cut carrots and fry for a few minutes.
  5. Return the beef to the pot.
  6. Season with some cracked black pepper, sea salt and rosemary.
  7. Add a few tablespoons of plain flour and stir in well.
  8. Pour in some red wine and beef stock.
  9. Bring to the boil and simmer for about ten minutes.
  10. Cover the pot with the lid and put it into the oven at 180C for about an hour and a half.
  11. Check the beef occasionally and top up with beef stock if it dries out.

At the end of the cooking time, the beef should be so tender that you could eat it with your dentures out.

But these aren't pies, you say? Well, I haven't finished yet.

I spooned the mixture into ramikins and then got out one of my latest purchases from Tupperware - the Squeeze It

I didn't exactly how to put it together, but after a few minutes I figured it out. It's fantastic! If you don't finish piping the contents, there is a lid you can screw on instead of one of the nozzles and you can store it in the fridge. Brilliant!

I made some mashed potatoes and piped it over the beef. The beef mixture was rather uneven, so I had a difficult time with the first two pies. I had to go over it a few times to fill in the 'gaps'. In the end they looked so crap I had to just mash it down and scraped over the top with a fork to make it presentable. The third and fourth ones turned out pretty well though.

out of the oven

For dinner, I was trying out something I've wanted to try for quite a while now.

Prawn Ravioli

Although this really requires for fresh pasta to be made, I didn't have the luxury of time so did it the cheat way. Wantan wrappers.

First, I prepared the prawn filling. On Masterchef a few weeks ago when the contestants were in Hong Kong preparing dim sum, they were shown how to make sui mai by bashing the prawns with a cleaver to mash up the flesh. I was keen to try this method! It took a few swings to get the knack of it, but I still made quite a bit of noise. Mum eventually came over and showed me a better technique. Preparing the prawns this way means that the prawns get a bit of tenderising yet keep most of their texture and it's not just mush. I seasoned the prawns with some chopped up parsley, chilli and a splash of fish sauce.

Now to prepare the wantan wrappers for the 'ravioli'.

Using an egg shaper, I cut out circles from each wantan wrapper.

Place some of the prawn filling into the centre of a circle and wet the edges with water.

Place another circle over the filling and press from the inside out to seal, making sure the air is pushed out so the ravioli don't burst open when they're cooking.

Voila! My first prawn ravioli!

I made a whole plate of the ravioli and was really pleased with myself!

To cook the ravioli, I brought a pot of water to the boil and then slid each one in. I had to use a wooden spoon to immediately stir them around a bit to stop them from sticking to each other as they cooked. After a few minutes, you can tell when they're ready because they float to the surface. I had to fish each one out individually with a pair of tongs and do it oh so very carefully so that I didn't tear any of them after all the hard work I put in to create them.

For the sauce, I fried some onion, garlic and leek in some olive oil, then added some cream and saffron threads.

Dinner
Prawn Ravioli with Creamy Saffron & Leek Sauce

Verdict: DELICIOUS & AN UTTER SUCCESS!

Dinner
Spaghetti Vongole with Leeks

  1. Sautee sliced onion and crushed garlic in some olive oil in a pan.
  2. Add some sliced leek and diced tomato and sautee for a few minutes.

  3. Add a splash of white wine to deglaze the pan.
  4. Add the clams and cover on low heat for a few minutes until the clams start to open.
  5. Add some spaghetti that has been cooked al dente and toss through the sauce.
  6. Serve with fresh basil and chilli.

Simba watching me in the kitchen as I cooked.

Dessert
Natural Yoghurt with Blueberries & Grapefruit

I really felt like something sweet but I had to look really hard to find some ingredients. I found some natural yoghurt in the fridge, some frozen blueberries and a can of grapefruit segments. A rather unusual combination, I know, but it sort of satisfied my craving.
