After work tonight I headed over to Benoit and Ivy's place for dinner. We were having pizza!

Benoit's Dad made the pizza dough and Ivy and I put the toppings on. We made three different pizzas, following Ben's instructions as to what to put on each one.

Pizza 1
avocado

grated mozzarella

rocket
proscuitto
grated mozzarella


Pizza 3
tomato sauce
mushrooms
red onion
salami
grated mozzarella


Pizza 2 turned out to be thick crust because the dough was left to sit too long I think. Pizza 1 and 2 were supposed to be 'fresh' pizzas but we chucked all the toppings on and put them into the oven. *shrug* we still polished them off!

We shared some custard apples after dinner.


The boys drove out to get us some icecream!

At work today Andrea and I had lunch together.

On today's menu:

HOT DOGS

I've been craving hot dogs all week, especially when I saw that someone at work was having them for lunch when looking in the fridge in the tearoom. Today, craving satisfied!



STEAMBOAT

Tonight we gathered at Ling's place for an eagerly awaited steamboat night. We're cherishing these nights of gluttony before the weather warms up and it becomes too hot to sit around the hot bubbling pot of soup.

Before starting on dinner, we snacked on some chips that Kong brought from an Asian supermarket.

These were absolutely morish!!
I need to hunt some down next time I go shopping!





It's nearing the Moon Festival season so Mum and her friends have ordered a whole lot of Moon cakes.

I like the lotus paste ones.


I took one of the 'pig' Moon cakes to have with our cuppas tonight.


Friday 21st August '09

I really felt like pasta tonight. I looked in the fridge for what I could use. I just wanted something simple since I was so hungry.

I sauteed some leek, onion and speck in olive oil, added some water and some of my homemade tomato sauce. As the sauce simmered, I added the scallops in to cook and then added al dente spaghetti. I did all this really quickly so that the leek wouldn't be overcooked and become soggy.

These scallops were so succulent and juicy. I try very hard not to overcook them or they get tough. These were done perfectly...if I do say so myself.

I also made some roast chicken to take to work over the weekend.

I used frozen clam meat, already cooked barramundi fillet and fresh peeled Ausralian prawns. Delicious! I served it with a generous amount of chilli flakes.

Lunch at Work
Fish Burrito


I packed the filling for the burrito separately and made it up just before eating it so that the burrito wouldn't get soggy in the fridge over night. I put some chopped lettuce, diced tomato, coriander, panfried diced barramundi and mayonnaise in a container and spooned this mixture onto my tortilla. I rolled it up and ate it - deliciousl light, healthy lunch.

Bee Hoon Soup with Fish


Tonight after work I set about making quiches. I used the new flan moulds that I bought a few weeks ago. Initially, I wanted to make each quiche with a different filling, but with time constraints before bedtime, I decided to just make two types.

I lined the flan molds with shortcrust pastry.


I blind baked the pastry using my ceramic balls.


The pastry is ready to fill!


I roughly beat together some cream, two eggs, cracked sea salt and black pepper, and a pinch of grated nutmeg.


Filling 1: Speck and Onion
I sauteed some finely diced onion and speck in olive oil.


Filling 2: Mushroom, Sundried Tomato & Basil
I sauteed some thinly sliced mushrooms and added this to some chopped sundried tomatoes and fresh basil.




I spooned the fillings into each pastry case, then sprinkled some grated Tasty cheese over them...


and topped them off with the cram and egg mixture.


After baking in the oven for about twenty minutes at 180C, this is the delicious end product!
