I ran a few errands and then started to prepare dinner. I felt like one of my old favourites tonight.
I made the soup with carrots, celery and leek tonight. I didn't use any vegeta stock or salt. The vegetables provided enough flavour - just perfect. Once the soup was done, I took Simba for a jog. Not that I needed to work up an appetite - I was pretty hungry already - but I've been looking for any excuse to get outside lately while the weather's been nice.
Back at home, I had a bowl of soup and then took out the Antoniou filo pastry and remaining spinach and pinenut sausge from Lenards. I'm eating out for dinner tomorrow night, but I'm going to need dinner for Sunday so I was going to get it ready tonight. I had set aside some of the sauteed vegetables that I cooked for the soup. I laid several pastry sheets out, cutting them in half to create two rough squares. On each square I spread half the sausage meat, added some grated tasty cheese and then topped it off with the sauteed vegetables. I wrapped each one, using butter to hold them together and then buttered the finished roll. For a bit of decoration, I sprinkled a couple of lines of chilli flakes but as you can see in the photo, I smudged the lines on the lower roll with the glad wrap when I went to wrap them up before putting them into the fridge.
Mum had made some dinner and I wanted some! She made her roast pork. I love how she gets the crunchy crackle - the yummiest bit! It was blasphemy watching Christina eating it. She removes the 'fatty' layer and the crunchy crackle and discards them! *shakes her head in utter disgust*
What a waste.
I used the fennel that Mr Pelle had given me from his garden to make a salad. I didn't have the same ingredients to make the fennel salad that Marissa had made recently when I was over for dinner, so I improvised. I used sliced fennel, red onion, grape tomatoes, avocado and fresh orange. For the dressing I used the juice of half a tangelo and some balsamic vinegar. Deliciously fresh!

While eating, I was watching one of the new release DVDs I had picked up on the way home from the shops today - 'Then She Found Me' starring (and directed by) Helen Hunt, Colin Firth, Bette Midler and Matthew Broderick. It's such a beautifully written and put together film. I was bawling my eyes out towards the end. It really touched on a subject close to my own heart. The age old problem we women face - the biological clock. I was lying in bed crying even after the credits had finished. Simba jumped up and lay right beside my head like a little fluffy pillow to keep me company. He always knows when I'm sad and comes to comfort me. I was still crying while doing the dishes and probably didn't stop until half an hour later. Brilliant movie.
Afterwards, I watched the other new release I had rented. 'Sweeney Todd' starring the one and only Johnny Depp. I didn't realise that this movie was a musical. I know it came out recently in the cinemas but I was going to wait until it came out on DVD or someone else got a copy - heehee. It was ABSOLUTELY BRILLIANT!! It's a really really dark movie set in London with Johnny Depp portraying a barber who turns into a serial killer to avenge a lost love. The songs were beautifully written - I loved this movie!
All in all, I was really happy with my choice of movies tonight.
After dinner I treated myself to a little fruit bowl. I think Simba shared half with me!
