I've been looking forward to tonight all week! Marissa, Teresa and I decided that we would do a huge seafood cookup at her house instead of trying to go out for dinner to satisfy our craving for seafood.
I headed over to Marissa's in the afternoon and arrived there just as she did. She had to work today. Perfect timing!
Teresa was already busy preparing the seafood she had bought and Marissa joked that the house smelt like a fish market as soon as we walked in. The aromas were just a hint of what was instore for us tonight!
We spent a few hours in the kitchen helping Teresa put together the food. We came up with ideas for the dishes as we went. We finally sat down to enjoy our food - it was supposed to be dinner for three but it was more like dinner for ten! We tried one dish at a time...
Here's the quick run-down of how Teresa made this...she poached some smoked cod in milk, kept the cod and mashed that up with some herbs to make a puree that we dipped with fresh Turkish bread. The leftover milk she reduced and used to make the sauce for the pasta. There was alot of 'mm-ing' while we licked our bowls clean.
Teresa mixed some cream with a breadcrumb and herb mixture and Marissa dolloped them onto the scallops we defrosted. We baked them in the oven and they came out perfect, even though we were worried they might not be cooked all the way through as we had just bought them frozen not even an hour before preparing them. We bought the scallops complete with roe on the shell. I love serving them on the shell because they just look so gorgeous!
I brought some mussel meat that I had in the freezer and Teresa cooked them simply with garlic. Delicious meaty chunks of mussel.
I cut open the lobsters and arranged them onto the platter so that they looked like hearts. Teresa dressed them with some lemon juice, garlic and parsley. We all agreed that the best way to serve lobster is in its simplest form. We like to be able to taste and appreciate the lobster flesh rather than have it masked by too much dressing or in recipes such as mornay or thermidore. This was just beautiful.
On my way over, I had a craving for chilli crab to be added to the menu. Marissa whole-heartedly agreed so we made a last minute trip to the Burswood Seafood store to get some. We almost had our tray of crabs snatched up by an Asian guy watching us go through the freezer. We chose the largest crabs they had. Teresa cleaned them and we were so excited to discover that one of the crabs had roe. They got added into the sauce along with all the other messy bits that I normally wouldn't eat straight from the crab. Teresa managed to improvise a chilli sauce to go with them. (I took some home and my sister thought the sauce tasted just like the sauce you get when you have chilli crab in a Chinese restaurant). Messy!
