I had to finish off the leftovers in the fridge. There were leftovers from when I made some for my sisters, and then Christina went and made another pot without finishing the leftovers. Aargh - annoys me that they don't check and waste food. Food that I'm paying for. This is why I get annoyed with Mum because she buys food for them and they waste it and she and I are the ones left to finish all the leftovers. *shakes her head*

I made a fruit salad that should hopefully last till tomorrow. I used the following fruits: white nectarines, yellow nectarines, honeydew, blood plums and apricots.

For dinner, I'd managed to buy some salmon fillets that were on special. Instead of paying about $30/kg, I paid just under $20/kg. I baked them in the oven with baking paper and aluminium foil. One on piece I drizzled olive oil and scattered some julienned ginger. On the other piece I laid a few slices of fresh lemon over the top, cracked pepper and olive oil. Into the oven. I was quite hungry, so I forgot to take a photo!

I made a salad to go with the salmon. Bab spinach leaves, red onion, yellow cherry tomatoes courtesy of my garden, and slices of pink lady apple. For the dressing, I used olive oil and white balsamic vinegar.

The salmon was cooked perfectly - about ten minutes was all they needed in a preheated oven at 180 degrees. The only problem was when I tried to dish up the fish...their skins stuck to the baking paper. Crappy baking paper!! So, after sacrificing the skin, I was able to peel off the rest of the fish and serve them.
