Breakfast
Ricotta, Tomato, Basil & Cracked Pepper
on Wholemeal Toast


Deliciously light and healthy snack that's able to be eaten in the car on the way to work. I prepare it quickly and pop it into the oven while I finish getting ready for work and by the time I'm putting my shoes on, it's ready. The fresh basil is from my herb garden - yep, my basil is doing well!

With all but one person at work a woman, the central topic of our daily discussions is none other than FOOD. One of the girls hails originally from Scotland and it's understandable that she has a soft spot for food. We often talk about our latest escapades in the kitchen and dining advertures, so today Andrea thought it was time she finally brought me some of her own home cooking.

Morning Tea
Thai Green Chicken Curry


Mmm delicious! She had the curry on a bed of steamed rice. It was a perfect serving for morning tea - I was starving. I've been craving Thai green chicken curry for a few weeks now, so this really hit the spot.

I was on my way to my car when I had to stop and take this photo. The flowers in the garden are gorgeous right now. Sure, some of them get a bit floppy by the late afternoon because of the heat, but I get a sense of calm and happiness wash over me when I leave the lab and walk to my car, seeing all these pretty flowers and the well-kept gardens. I think it also helps to just be out in the fresh air and away from the stale air conditioned room and horridly harsh lights.

Dinner
Laksa


I bought a jar of laksa paste and made some for dinner, using some Vietnamese rice vermicilli noodles, prawns, okra, mung bean shoots, sliced fish cake and kang kong. I added some fresh coriander and cut chillies. Jocelyn absolutely loved the laksa paste because it wasn't spicy. At all. I had to go out to the kitchen to cut more chillies when I got halfway through.
