Pork Scotch Fillet with Baked Potatoes & Tabbouleh


I bought a hunk of pork scotch fillet on the bone the other day. I intended to cook it last night but went out to dinner instead. Mum saw it was nearing its use by date so she cooked it last night.

This is the bottom half of the hunk of pork. Those bones are going to be awesome to nibble the meat off!

She seasoned it with Asian five spices, stuffed whole garlic cloves into it, and rubbed a generous amount of sea salt into the skin so that it crisped up and was sooo crunchy!

You can see the oils bubbling after I heated the slices of pork in the microwave for a few minutes.
