One of the girls finished her last day with us at work today so she brought in some goodies to put together a platter for us. Yum!
*raises her glass* "A toast: while most people eat to live, I live to eat. There's nothing like enjoying a delicious home-cooked meal with a fine bottle of wine in the company of fantastic friends. To life!"

For the vegetarians, I roasted some pumpkin and mashed it with some ricotta, a splash of balsamic vinegar, a pinch of sea salt and I threw in some pinenuts just before making the pies. They were gorgeous! I must make them again one day!

Our good friend Kok Heng is back in town so we gathered for dinner tonight. Surprisingly, although most of us live in the surrounding area, no one else except for me had been to this restaurant. They were all very impressed with the food.

I used to make these vegetable stacks quite often. First, you pan fry slices of eggplant and zucchini in a little bit of oil in a pan and then layer them with some sliced mushroom (this time I used whole portabello mushrooms), sundried tomato and crumbled fetta. Drizzle a bit of olive oil over them and bake in the oven for about ten to fifteen minutes. Delicious!
