MELBOURNE CUP DAY

We entertained ourselves at work today by getting into the spirit of the Melbourne Cup. We bought bets on horses which we drew out randomly and I came first place with Shocking!

We also brought in something each for morning tea. It was a busy day so for most of us, it actually became our substitute lunch.



Natalia made the hedgehog slice...and it was frikkin' awesome!! I haven't had a hedgehog slice since uni. Hedgehog slices usually have the texture of a biscuit but Natalie's was gooey like fudge. Yum! We were all asking for the recipe afterwards.

At home, I had a quick snack while my dinner was cooking.

Mum's Pork Rib Soup


Dinner was roast lamb. I made slits in the lamb and poked slices of garlic and fresh sage leaves from the garden in. I roasted potatos, carrots, onions and garlic with the lamb.

Half way through cooking, I poured some Vegeta stock over the vegetables and the pan juices made such a delicious gravy afterwards! The lamb was extremly moist, tender and just mmmMMmm...

After work I began with the intention of making some mini quiches (as well as larger quiches for dinner) to take to work for our Melbourne Cup morning tea tomorrow. However, the thought of having to spend time blind baking all those little mini pastry cases was a turnoff so I decided to just use puff pastry to make little savoury pasties.

Some I filled with Cheese, Bacon & Onion,
others I filled with Spinach & Semi Sundried Tomatoes


I love eating puff pastry straight out of the oven. The pastry is so light and flaky!

I used some shortcrust pastry to make two small quiches.

I would love to take this moment to just say that I absolutely love eggs! They are such wonderful things. I love them cooked every way possible - scrambled, poached, fried, boiled, in omelettes, quiche, served cold as hors d'oeuvres, in curried egg sandwiches, used as a garnish on fried noodles, used to thicken up soups like creamy chicken & corn soup and shark fin soup - the uses are endless!

Baked Barramundi Parcel


I baked the barramundi fillet with some lemon zest, spring onions, sliced roma tomato, cracked black pepper and a dash of olive oil. I wrapped it in an inner sheet of baking paper and an outer sheet of aluminium foil. Into the preheated oven for ten minutes at 180C, then I turned the heat off and let it rest in the oven for another five minutes before serving.


Meanwhile, I panfried some asparagus spears in butter.

Such a light and deliciously healthy meal - but I was still hungry after eating it!

VERDICT:

Total success! I absolutely hacked my grocery bill down to only just under $35 for the whole fortnight! In fact, I'm going to continue this challenge next week (Monday to Friday) and hopefully purge more stuff from the pantry.

The only real problem with this challenge is the meat coming from the freezer. If it's chicken or seafood it's fine. I always buy extra chicken thighs when they're on special and dice them up and pack them in zip lock bags for later convenience. However, if I want a piece of steak for dinner, I will buy it that day after work because I don't like eating steak that has been frozen. It's okay if you're defrosting the steak to slice up for a stirfry. Or to use in a stew. But you can't cook a nice medium-rare steak if it's been defrosted. The meat gets a disgusting brown hue instead of that gorgeous pink colour when you've cooked it just right. *shudder* I must convince Mum not to keep buying steak in bulk packs because I don't cook them for steak dinners if they're frozen.

Anyhow...I will have to make an allowance to do a quick shop on Monday after work to pick up a few basics.

Lunch
Mum's Fried Rice

I love eating Mum's fried rice with lots of fine white pepper. I had a headache when I woke up today, so after managing two bowls of fried rice, I took a few aspirins and went to lie down.

For four hours.

I got up at about 4pm and took another aspirin before heading out to Pet Magic to get some gravel for the aquarium. I had to remove the old gravel to try to resolve the phosphate problem I had with the water. I've been meaning to get some new gravel and more live plants. I've had the intention of creating a lush green environment in the aquarium for quite some time now. It'll provide heaps of places for the fish to hide and explore, and also look healthy and tropical. It's easier said than done. I need to do it in steps to try to weed out problems as I go.

I got the gravel and plants, then rushed over to help Fleurette with her hair for the Halloween party she and Noel were going to. Then I rushed home, gobbled an apple to supress my hunger, took Simba for a really short walk up and down the street, and then drove out to meet Ramona for dinner.

Ramona recommended this dish because she had it takeaway once and the dried chillies are fantastic! It's always great to eat out with fellow chilli fans.


Back at home, I set about rinsing the new gravel, adding it to the tank, then cleaning the filter and adding my newly acquired plants. Although the water is really cloudy because of the new gravel, I can already see it starting to look like how I want it to look. The addition of live plants really livens the tank up.

These plants float on the surface to provide a hiding place for the fish.



Whenever I feel headache-y, sitting infront of the aquarium always helps to relax me and for a moment, I tend to forget the throbbing pain. I love watching the fish and their different behaviour. At the moment, the large female guppy that just gave birth is being frantically chased by several male Enders guppies. The other smaller juvenile guppy females are also getting chased by the males. I think I will need to get a few more females to break up the orgies. They recommend that you keep the ratio of female to male guppies with the females higher than the males. Frisky males.

On the way to work, I stopped by at Jesters, all excited to pick up their new "Surf & Turf" pie that I've heard them advertise on the radio.

porterhouse steak with creamy peppercorn sauce

pancetta & mushroom risotto



Pancetta & Mushroom Risotto

Ingredients:
  • 1/2 small brown onion, chopped
  • 3 cloves garlic, crushed
  • 1 tspn rosemary
  • 1/4 cup pancetta, diced
  • 1 cup mushrooms, sliced
  • 1 mushroom stock cube
  • 1 cup arborio rice
  • 1L water
  • cracked black pepper to season

  • Method:
    1. Heat the pan up with the pancetta in it and fry for a few minutes.
    2. Add the onion, garlic and rosemary. Sautee with the pancetta for a few minutes.
    3. Add the stock cube and a few Tsp of water.
    4. Add the rice and mushrooms and stir continuously for a few minutes so the rice doesn't stick or burn.
    5. Add the stock cube and 1 cup of water and bring to the boil.
    6. Cover the pan and stir occasionally, adding the water a little at a time.
    7. Season with cracked black pepper.
    8. When rice is cooked, turn off heat and leave lid on to rest for a few minutes before serving.


    Dessert
    Philadelphia cream cheese with blueberries and strawberries

    I really wanted something sweet, like whipped cream or ice cream. But I didn't have either, so I got a few mini tubs of Philadelphia cream cheese out and mixed some castor sugar, icing sugar and a few drops of vanilla essence through it. It still had a 'cheesy' taste to it so I won't be trying it again any time soon.
