For yesterday's work lunch I made chicken enchiladas, or rather, I cooked the filling for them but forgot to bring the wraps to work. So, today we had enchiladas for lunch!

Chicken Enchiladas grilled with Cheese

I made the filling with diced chicken thigh, a can of four bean mix
and a packet of Woolworths' brand taco seasoning.


For my love of Italian cuisine, this may be a surprise to you all that I don't think I have ever cooked gnocci at home. It's one of those dishes that's high up on my 'to do' list, which I will hopefully be getting around to when I move into my new house and have the space. I had a craving for it lately so I picked up an Italian brand of gnocci from Cannington Fresh.

Yesterday, I made a rich tomato sauce with onion, garlic, parsley, basil and a jar of passata. Tonight, I boiled the gnocci and then tossed them through the tomato sauce I made with some sliced leek.

Served with lots of grated pecorino.

A very simple dish but oh so so sooooo delicious! The tomato sauce was divine and the gnocci were cooked perfectly. I must make this again very soon!

THURSDAY LUNCH

We didn't really have a theme today but we agreed that the foods we brought had to be warm, hearty and moorish.

Lidie made this South African dish - bobotie. It's minced beef with a top layer of an egg mixture. She brought in a jar of chutney to accompany it and it was sooooo good! We all were demanding the recipe afterwards.

It was awesome with some of his harissa paste too!

Alison brought in a Spinach Quiche.

Claire and Dr Park ordered pizza for us!

Rucha brought an Indian dessert of cooked grated carrot. Yes, it was new to all of us and I think the general consensus was that we all felt strange eating a dessert made of carrots, but the cardomom flavour was gorgeous! We didn't have any vanilla ice cream to go with it so we had to settle for cookies and cream, which was an odd combination.

This instant macaroni and cheese is available in a cup or in a sachet. I think that the sachet tastes better than the cup, even though it requires a bit more effort to prepare.

Benoit ordered the Beef Tataki, not realising that it's pretty much raw! Some of us helped him eat it and it was divine! The meat was so tender and melted in your mouth!

I must say, the cake was really good! I usually don't eat birthday cake because I never get a small enough slice and it looks rude to leave any of it uneaten. However, I polished off this slice. The custard was so light and the overall cake wasn't too sweet. Very nice!

I spent a few hours today hauling bricks by hand from one side of the house to the other to make room for where the cement paving is going to go. I was about two thirds of the way through when it was time to head off to work.

I love that mere seconds down the street from my house is a plethora of fast food available. Not that I eat much fast food, but it's just good to see so many of them in the one place in case I do feel like something on the run.
